Goat meat 800 grams Roasted peanuts 100 grams Unsweetened fresh milk 400 ml Coconut milk 200 ml Lemongrass 4 stalks Garlic 50 grams Onion 1 bulb Curry powder 1 teaspoon Five-spice powder 1 teaspoon Annatto oil 1 teaspoon Satay 1 tablespoon Whole soybean sauce 1 tablespoon Cornstarch 1 tablespoon

How to Choose Good Goat Meat

  • Good goat meat is fresh goat meat, tender young goat, with a slaughter-to-preparation time of about 12 hours.
  • Fresh goat meat has a pink-red color, firm texture, and does not leak water. Frozen goat meat has a pale color, often leaks water, and has a fishy smell.
  • Young goats usually have less pungent goat smell, while older goats have a stronger odor. Young goat has a pink-red color, with small and fine fibers. Older goats have a darker meat color and larger fibers.
  • Look for reputable suppliers of goat meat, with clear origins, complete inspection stamps, veterinary certificates, food safety certificates, and facilities or shops that meet the conditions for selling fresh meat.

How to Prepare Stir-Fried Goat Meat

  • Preprocessing Goat Meat

    Wash the goat meat thoroughly and let it dry whole. You can use one of the two methods below to preprocess the goat meat to avoid a strong smell.

    Then, cut the goat meat into bite-sized pieces and put it into a bowl for marinating.

    Add to the goat meat bowl 2 spoons of seasoning, 1.5 spoons of sugar, 1.5 spoons of five-spice powder, 2 spoons of curry powder, and 1 spoon of satay. Mix thoroughly and marinate the goat meat for 15 minutes to absorb the spices.

    Tips for Preprocessing Goat Meat to Avoid Odor

    • Using White Wine: Wash the goat meat, cut it into bite-sized pieces. Peel and wash ginger, then finely chop it and mix it with white wine. Soak the goat meat in this white wine mixture for about 5 minutes, then rinse with cold water.
    • Using Vinegar: Mix 15 ml of rice vinegar with 1 liter of clean water, boil on the stove. Boil the goat meat in this mixture until it reaches a second boil, then remove it. At this point, the goat meat will have significantly reduced its odor.

  • Prepare other ingredients

    Take 4 stalks of lemongrass, wash them clean with water, then crush and cut them into pieces about 4 cm long.

    Peel the garlic, crush it, and then mince it finely. Peel the onion and cut it into wedges.

  • Stir-fried goat meat

    Place a pan on the stove, add 1/2 tablespoon of cooking oil and 1 tablespoon of annatto oil. Next, add lemongrass and garlic to sauté until fragrant.

    After the lemongrass and garlic are golden, add 1 teaspoon of curry powder and the marinated goat meat to stir-fry together. Stir well and cook on high heat.

    When stir-frying for a while, add 1.5 tablespoons of fermented soybean paste to give the dish a unique flavor and make it more delicious.

    Stir-fry until the goat meat is firm, then add 300 ml of fresh milk. You can adjust the seasoning to suit your family’s taste. Once it’s to your liking, add 200 ml of coconut milk to enhance the richness of the dish.

    When the coconut milk boils, add 100 ml of fresh milk mixed with 2 teaspoons of cornstarch to thicken the dish.

    Continue to stir-fry until the mixture boils and thickens, then add the onions and cook until the onions are just cooked through; that’s how you finish the stir-fried goat meat dish.

    Finally, you scoop the stir-fried goat onto a plate, sprinkle some peanuts on top, and if you like it spicy, you can add a few slices of chili and enjoy it with bread.
