Ingredients for Eel Cooked with Lemongrass and Chili For 4 people

Eel 2 pieces (about 400gr) Lemongrass 100 gr Chili 4 pieces Garlic 4 cloves Spring onion 2 stalks Red onion 1 bulb Fish sauce 2 tablespoons Color water 1 tablespoon Lemon juice a little Cooking oil 5 tablespoons Common spices a little (salt/ sugar/ monosodium glutamate/ seasoning)

How to Choose Fresh Eel

  • Prioritize choosing eels of moderate size, with two distinct parts, a yellow belly and a black back, as their meat will be more fragrant and firm.
  • Choose live eels, with intact bodies and skin, swimming actively to ensure the eel meat is fresher and sweeter.
  • Avoid buying eels that are too small or too large (with a black belly) as these are farmed eels, which have soft and less fragrant meat.

How to prepare Grilled Eel with Lemongrass and Chili

  • Prepare and marinate the eel

    Buy pre-cleaned eel from the market, to clean off the slime and eliminate the fishy smell of the eel, use salt and lemon juice to rub over the eel several times and then rinse thoroughly with water.

    After the eel has drained, cut it into bite-sized pieces and marinate with: 1 spoon of salt, 1 spoon of monosodium glutamate, 1 spoon of seasoning powder, 1 spoon of sugar, 2 tablespoons of fish sauce, 1 tablespoon of caramel sauce, mix well and marinate for about 15 – 20 minutes to let the eel absorb the spices.

    How to clean eel from slime
    • Method 1: Use salt to rub over the eel for about 2 minutes, then wash the eel with lemon juice, and rinse well with fresh water and use a clean towel to pat the eel dry.
    • Method 2: Use rice washing water or lemon juice to rub over the eel several times until you feel the slime is reduced, then rinse thoroughly with water several times.
    • Method 3: Alternatively, you can use kitchen ash to rub over the eel and wipe off the slime several times along with the ash, then rinse thoroughly with water.
