Squid 2 pieces Green onion a little Coriander a little Garlic 1 bulb Chili 1 piece Dried vermicelli a little Cooking oil a little Oyster sauce 1 tablespoon Fish sauce 1 tablespoon Common spices a little (Salt – sugar – ground pepper – monosodium glutamate)

How to Make Steamed Squid with Garlic and Onion

  • Prepare the squid and other ingredients

    When you buy the squid, use your hands to hold the head and pull it out, discarding the ink sac and the internal organs of the squid. Then, squeeze out the squid’s beak and discard it, using a little salt to rub the squid’s tentacles to remove any remaining parts stuck to them.

    Next, peel off the outer membrane of the squid’s body, pulling out the squid’s cartilage from the body. After that, rinse the squid thoroughly.

    If the squid you are using is fresh, do not soak or wash it too much with salt water as it will lose its sweetness.

    Peel the garlic cloves, remove the skin, and wash them clean. Crush the garlic and chop it finely, then place it in a bowl. Wash the chili, remove the seeds, then cut it into small strips, and chop the chili finely to add to the bowl of garlic. For the coriander, use the stems, discard the leaves, and wash them clean before chopping them finely to add to the bowl of garlic and chili.

    Wash the green onions and chop them into small pieces to drain.

  • Make garlic onion sauce

    Heat 1 spoon of cooking oil, when the oil is hot, turn off the heat and pour the oil and bowl of fried garlic and chili to make it fragrant. Add 1 tablespoon of oyster sauce and 1 tablespoon of fish sauce along with a little ground pepper and mix well until the sauce thickens.

  • Blanch the squid

    Place a pot of water on the stove, when the water boils, add the squid and blanch for about 1 minute to firm it up. Do not boil for too long, or the squid will become tough and lose its sweetness.

    Utilize the squid boiling water to blanch the dry vermicelli for about 1 minute until it’s soft, then take the vermicelli out onto a plate.

  • Steamed Squid

    Place a pot of water on the stove. When the water starts to heat up, cut the squid into pieces about 1 cm thick. Add the squid and place it on a plate of noodles and drizzle the prepared chili garlic sauce over it.

    When the water in the steamer starts to boil, place the plate of squid into the steamer. Cover and steam the squid for 5 minutes.

    After steaming, take the squid out and sprinkle some chopped green onions on top, and it can be enjoyed right away. This steamed squid dish is steamed just enough to retain the sweetness and the crunchy freshness of the squid.

Squid 2 pieces Oyster sauce 2 teaspoons Cooking wine 1 tablespoon Sesame oil 1 teaspoon Scallions and coriander A little Minced garlic A little (adjust according to taste) Cooking oil A little Common spices A little (Salt – Sugar – Ground pepper)

How to Make Steamed Squid with Scallion Oil

  • Prepare the squid and other ingredients

    First, use your hand to grasp the tentacles and pull them away from the squid’s body. Then, remove the squid’s innards and clean the skin thoroughly.

    Cut off the insides and eyes of the squid’s head. Then, squeeze and remove the central beak. Use your hands to rub the tentacles to remove any remaining suckers. Rinse the squid one more time and place it on a plate.

    Next, use a knife to make shallow cuts on the squid’s body, spaced about 1 cm apart.

    Wash the scallions and herbs, then cut them into pieces about the length of a finger. Add the chopped scallions and herbs to a bowl.

    Peel, wash, and finely chop the garlic. You can adjust the amount of garlic according to your taste.

  • Make scallion sauce

    Add to a bowl the scallions and coriander including 2 teaspoons of oyster sauce, 1 tablespoon of cooking wine, 1 teaspoon of sesame oil, then mix well. You can add chili powder if you like it spicy.

  • Steam the squid

    Place a steamer pot on the stove, add water to the pot and bring it to a boil. When the water boils, place the squid plate into the steamer for 3 minutes to cook the squid until firm. You should not steam for too long, or the squid will become tough and lose its fresh sweetness.

    After steaming the squid, lift the squid plate out and pour the prepared scallion oil over the squid. Let the sauce sit for 5 minutes so it soaks into the squid.

  • Fresh squid are those with shiny colors, the back is dark brown, and the belly is milky white, with clear eyes that are not bulging or leaking fluid.
  • It is advisable to choose squid that feels firm and elastic to the touch, with the tentacles and arms still sticking together.
  • Do not buy squid with a soft upper body, cloudy eyes, leaking fluid, and mushy tentacles that are almost detached from the body. These squid are spoiled; when cooked, they will not taste good and can be harmful to health.

How to choose fresh scallions

  • Fresh scallions will still have roots; the more roots, the sweeter they are. The stalks are dark green, crispy and easy to break, with the white ends looking plump and shiny, indicating they are fresh.
