How to prepare Garlic Fried Pork Kidney

  • Prepare the pork kidney

    After purchasing the pork kidney, use a knife to cut it in half. Next, cut off the white membrane inside the pork kidney. This part is what causes the pork kidney to have an unpleasant smell. After that, turn the outer side of the pork kidney over and use a knife to score it in a crisscross pattern.

    Put the pork kidney in a basin, add 1 tablespoon of salt and 1 tablespoon of cornstarch, then gently massage the kidney with the salt and starch, and rinse it clean with water 2 – 3 times, then let it drain completely. This method will help you thoroughly eliminate the odor of the pork kidney.

    Finally, hold the knife at a slight angle and slice the pork kidney into bite-sized pieces. Be careful not to slice them too thinly so that after cooking, the pieces do not become dry and lose their flavor.

    First, you will use about 6 – 8 large garlic cloves, cut in half. Heat a pan on the stove and add plenty of oil to prepare for deep frying.

    Take a few cloves of garlic, peel them and chop finely. Cut the onion into wedges, remove the roots from the green onions and wash them clean. Heat another pan on the stove, add about 1 tablespoon of cooking oil. When the oil is hot, add the chopped garlic to sauté until fragrant.

    Next, add 1/2 ladle of water to the pan and season with 1/3 tablespoon of MSG, 1/4 tablespoon of seasoning powder, 1/2 tablespoon of sugar, 1/4 tablespoon of ground pepper, 1 tablespoon of chili sauce, and 1 tablespoon of oyster sauce, stirring to combine the seasonings.

    Then, add the fried pig kidney, along with the green onion roots, onion, and sautéed garlic, and toss everything together so that the ingredients absorb the sauce. Stir-fry until the sauce reduces, then turn off the heat, plate it, and sprinkle some more sautéed garlic on top to finish.
