Pork intestines 1 piece (about 600g) Carrot 100 g Baby corn 100 g (young corn) Peas 100 g Onion 80 g Garlic 3 cloves Celery a little Celery a little Leek 1 stalk (spring onion) Cooking oil 2 tablespoons Common seasonings a little (fish sauce/ oyster sauce/ seasoning powder/ monosodium glutamate/ ground pepper)

Tips for Preparing Pig Intestines Without a Fishy Smell, Crunchy and Chewy

  • After purchasing the pig intestines, place them in a basin, squeeze 1 fresh lemon and add a handful of coarse salt. Proceed to knead and massage the intestines thoroughly both inside and out. Repeat this process 2 times to remove the slime and reduce the odor.
  • Next, rinse the pig intestines thoroughly, let them drain, then mix in a bit of flour and continue to massage. After that, rinse again with water to ensure the intestines are completely clean.
  • Boil a pot of water, add crushed ginger and scallion roots, then drop the pig intestines in to blanch for about 15 – 20 minutes. When the pig intestines are blanched, you can take them out and prepare your favorite dishes.

  • Prepare the Ingredients

    After blanching the pig intestines, cut them in half or into 4 parts and slice them into bite-sized strips. Cut the carrots into long sticks of 5 – 6cm or carve them into flowers as desired. Split the baby corn in half, and cut the onion into wedges.

    Remove the stems from the peas, and cut them in half if they are long. Slice the shallots diagonally, and cut the celery into 2cm long pieces.

    Peel the garlic, crush it, and then chop it finely.

    You heat a pan on the stove, then add 2 tablespoons of cooking oil. When the oil is hot, add minced garlic and sauté until fragrant, then quickly add the pig stomach and stir well for 2 – 3 minutes.

    Next, add the carrots and stir for a few minutes before seasoning with: 1 tablespoon of oyster sauce, 1 tablespoon of fish sauce, 1/2 tablespoon of seasoning powder, 1/4 tablespoon of monosodium glutamate, and 1/4 tablespoon of ground pepper.

    Stir until the carrots start to soften, then add the corn and peas. Continue to stir, and when these vegetables begin to cook, add the onion, celery, and scallions.

    Remember to adjust the seasoning to taste, then quickly stir so that the ingredients blend together. When you see the onion become translucent, you can turn off the heat, plate it, and enjoy.
