Ingredients for Peanut Dipping Sauce Serves 1 large bowl

Peanuts 200 gr Rice 2/3 cup (rice bowl) Soy sauce 1 cup (rice bowl) Chili sauce 2 tablespoons Common seasonings A little (Sugar/ salt/ seasoning powder)

How to choose good peanuts

  • Choose peanuts that have a shiny shell, beautiful light brown color, evenly sized, and feel firm when held.
  • Avoid peanuts showing signs of mold, unusual colors, or shriveled peanuts with wrinkled shells.
  • Do not buy peanuts that have been stored for a long time, as their shells tend to be dull and they will smell oily when cooked.

How to make peanut dipping sauce

  • Soak peanuts and rice

    Wash the peanuts with water and soak them overnight. Every 3 hours, change the water once to prevent the peanuts from being bitter and to enhance their aroma. After that, drain the peanuts.

    Soak the rice in water for 15 – 20 minutes, then drain.

  • Boil peanuts

    Place a pot on the stove, turn the heat to medium, and add 1.5 liters of water to the pot. Next, add the peanuts and 1/2 teaspoon of salt, then boil for 25 – 30 minutes until the peanuts are tender.

    After that, turn off the heat, let the pot of peanuts sit for another 25 – 30 minutes, then drain.

  • Roast rice to make roasted rice powder

    Place a pan on the stove, turn on medium heat, add the rice to the pan and start to roast evenly until the rice grains turn golden, then turn off the heat and let it cool. After that, put the roasted rice into a blender and grind it finely.

  • Cook peanut sauce

    Place a pan on the stove, turn on medium heat, add 1 rice bowl of soy sauce, 1 rice bowl of water, 2 teaspoons of seasoning powder, 1 teaspoon of salt, 2 tablespoons of chili sauce, and 5 teaspoons of sugar, and stir well for the spices to blend together.

    Next, reduce the heat to the lowest setting and add the boiled peanuts to cook with the sauce for about 10 – 15 minutes.

    Then, add the roasted rice powder, stirring continuously to prevent clumping. After that, cook for about 7 more minutes for the rice powder to expand and the peanut sauce to thicken, then turn off the heat.

    Tip: After making the peanut sauce, you should let it sit for 2 – 3 days in the refrigerator refrigerator or store it in a cool, dry place away from direct sunlight before using. This allows the sauce to absorb the flavors and taste much better.

    When eating this peanut sauce, you will feel a slightly salty and sweet taste that is just right, accompanied by a creamy but not overly rich flavor of peanuts.

How to preserve peanut sauce

  • You put the peanut sauce into a jar made of plastic/glass with a tight lid and store it in a cool place, avoiding direct sunlight, and use it within about 2 – 3 days.
  • If you make a large quantity and want to store it for a longer time, you can also put it in a tightly sealed jar and keep it in the refrigerator, using it up within a week to ensure the sauce’s taste!
