How to make Doremon cake with green tea filling

  • Mix the egg mixture

    First, put into a bowl 1 chicken egg, 1 spoon of vanilla extract, 20gr of sugar, 2 teaspoons of honey, 30ml of unsweetened fresh milk and then stir well.

  • Mix the cake flour and let it rest

    Then, slowly add 60gr of sifted flour and 2gr of baking powder into the egg mixture. Stir the mixture until the batter is smooth and no longer lumpy.

    Once the mixture is well combined, cover it with plastic wrap and let the batter rest for 15 minutes.

    • To prevent the cake batter from becoming tough, chewy, and hard, you should stir the mixture in one direction and mix quickly for no more than 1 minute.

    First, heat 100ml of unsweetened fresh milk until warm, then add 5gr of finely sifted matcha powder and stir well.

    In a separate bowl, beat 1 chicken egg with 30gr of sugar and 15gr of corn starch. Next, slowly pour the egg mixture into the matcha milk and stir well.

    Then, pour the mixture into a pot through a sieve. Stir evenly over low heat until it thickens.

    Finally, add 10gr of unsalted butter, stir once more, then turn off the heat and let it cool.

  • Frying Doremon cakes

    Place a non-stick pan on the stove and heat it over medium-low heat, then add a little cooking oil and use a paper towel to wipe around the surface of the pan.

    Next, stir the batter well, scoop 1 ladle of batter, and pour it from a height; the batter will spread evenly and form a circle.

    Fry the cake on low heat for about 2 minutes; when you see small bubbles appearing on the surface, flip the cake over and continue frying for about 30 seconds to 1 minute until cooked. Repeat this process until you finish the remaining batter.
