Salmon 2 pieces Onion 3 bulbs Garlic 4 cloves Red onion 4 bulbs Green onion 2 stalks Bird’s eye chili 3 fruits Coconut water 400 ml Coloring sauce 1 tablespoon Chili powder a little Fish sauce 2 tablespoons Chili sauce 1 teaspoon Vinegar a little Tea water a little (tea) Cooking oil 1 tablespoon Common spices a little (sugar/salt/seasoning powder)

How to choose fresh and delicious salmon

  • Good salmon will have bright pink or orange flesh, dry and not slimy. Additionally, the fish’s marbling should be evenly colored and bright.
  • Touching it should feel firm and have good elasticity. If a dent is made when pressed but it immediately returns to its original state, the salmon is still fresh.
  • Moreover, choose fish that has a natural fishy smell, without any strong or rotten odors.
  • Avoid choosing fish with dark, dull colors and tiny brown spots on the surface, as this indicates that the fish has begun to spoil and is no longer usable.

  • Prepare the salmon

    To completely eliminate the fishy smell and dirt, after purchasing the salmon, soak it in water mixed with a little salt and a bit of vinegar for about 5 minutes, then remove it, continue soaking it in tea water for about 2 minutes, then rinse it clean with water and let it dry.

    Wash and chop the scallions. Peel and halve the onion. Peel and finely chop the shallots and garlic.

    Place a pan on the stove, add 1 tablespoon of cooking oil and heat it, then add the chopped shallots and garlic, frying until golden and fragrant before turning off the heat.

    In a bowl, add 2 tablespoons of fish sauce, 2 teaspoons of sugar, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1 teaspoon of chili sauce, 1 tablespoon of coloring sauce, and a little chili powder, then stir well until the ingredients are completely dissolved.

    Lay sliced onions at the bottom of the pot and then place the salmon on top. Drizzle the sauce mixture evenly over the fish, add a few crushed chili peppers, and the fried onion and garlic from earlier. Marinate the fish for about 15 – 20 minutes for the fish to absorb the spices.

  • Cook the fish

    Place the pot of fish on the stove and cook on medium heat for about 3 – 5 minutes until the salmon firms up.

    Then pour in the coconut water, lower the heat, and continue cooking until the liquid thickens and the fish absorbs the seasoning.

    Finally, add chopped green onions to the pot, cook for another minute, then turn off the heat.
