How to choose fresh and delicious salmon
- You should choose salmon that has a shiny and bright body. The skin should be tight against the body and not peeling or scratched.

How to prepare Ginger Braised Salmon

Prepare the ingredients
Rinse the salmon fillet thoroughly and let it drain completely.
Remove the garlic heads, peel, wash, and chop finely. Clean the ginger, peel it, and cut into strips. Wash the chili, remove the stem, and slice it.
Peel the onion, wash it, and cut it into wedges.
Cut off the roots of the green onion, wash it, slice the green part, and cut the leaves into pieces about one finger joint long.

Marinate the fish
Put the salmon fillet into a bowl along with the minced garlic, ginger strips, 1 tablespoon of chili salt, 1 tablespoon of coloring sauce, and 1/2 teaspoon of sugar, then mix well.
After that, sprinkle a little pepper on the surface of the fish and marinate it for about 1 hour so that the fish absorbs the spices evenly.

Cooking fish
You add 2 tablespoons of cooking oil into the pan and heat it on the stove at medium heat. When the oil is hot, add the sliced onion and sauté for about 2 minutes until fragrant and slightly golden.
Next, add the sliced chili to the pan and stir for about 30 seconds, then place the fish on top along with the remaining marinade from the bowl.
Cover the lid and cook the fish on low heat for about 5 minutes. After that, open the pot lid and add 1 tablespoon of fish sauce and then the chopped green onion!
Continue to cover the pot and simmer the fish for an additional 30 seconds to 1 minute until the onion is cooked, then turn off the heat and plate the fish on a plate.
