Mix jelly powder and beat eggs
Put 400gr of sugar and 1 packet of jelly powder into a pot, use a whisk to mix well and gradually add 1.6 liters of filtered water. Add while stirring evenly to avoid clumping. Then soak the jelly for 30 minutes.
Separate 5 egg yolks into a bowl and beat well, then add 1 tube of vanilla to the egg bowl and continue to beat well until the vanilla powder is completely dissolved.

Heat the cheese and egg mixture
Add 100g of cheese and 120g of condensed milk into a pot and whisk them together.
Next, add all the fresh milk into the cheese mixture and stir well, then place the pot on the stove to cook over low heat, stirring continuously until the cheese is completely melted.
After about 7 – 10 minutes, when the cheese has melted completely, turn off the heat and slowly add the beaten egg yolk mixture, stirring well.
To make the flan cheese smoother, once the cheese and egg mixture are well combined, strain the mixture through a sieve twice.

Put the pre-soaked jelly pot on the stove and cook on low heat for about 10 – 15 minutes. When you see the jelly mixture boiling, divide it into 2 equal parts and place them into 2 pots.
In the first pot, we will add 1 packet of coffee and stir well on the stove over low heat for about 5 – 10 minutes until the coffee dissolves completely and blends into the jelly mixture.
In the other pot, we will gradually add the egg cheese mixture from earlier and stir well on the stove over low heat for 5 – 10 minutes.

Pour into molds
Prepare your favorite mold and pour the jelly layers into the mold according to your preference. TasteVN suggests pouring the coffee jelly layer first, then waiting for the surface of the jelly to set before pouring in the remaining flan cheese layer.
Pour gradually until the jelly mixture is finished, keeping the jelly warm on the lowest heat during the pouring process to prevent it from setting while pouring into the mold!

Heat the Milk Mixture
Pour the mixture into a pot and place it on the stove, cooking this mixture on low heat, stirring constantly.
Cook for about 3 minutes until the mixture is slightly warm and the cheese melts, then turn off the heat. After that, strain the mixture through a sieve for a smooth consistency.

Cook the jelly
Soak 10g of jelly powder in 1 liter of water for 30 minutes to 1 hour.
After the jelly powder has soaked, put it in a pot and place it on the stove, cooking for 7 – 8 minutes until it boils, remember to stir well while heating!

Stir the flan jelly mixture
Place the bowl of milk mixture in a pot of boiling water, simmer until the water is gently boiling, then turn off the heat to keep the milk mixture warm and prevent it from solidifying.
After cooking the jelly for 7 – 8 minutes, scoop 350ml of jelly water into a bowl and slowly pour it into the bowl of milk mixture.
In the remaining jelly water in the pot, add 120g of sugar, then add 200ml of instant coffee and stir well until dissolved.

Now scoop into the mold 2 tablespoons of coffee jelly, wait about 3 – 4 minutes for this layer of jelly to set, then gently add another 2 tablespoons of milk jelly until the mold is full and you run out of jelly.
To prevent the milk mixture from setting, keep the milk mixture warm by placing the bowl of milk mixture in a pot of boiling water.
