How to choose good tea bags for making milk tea

How to make Mochi Milk Tea

Mixing mochi flour
Pour 40g of glutinous rice flour into a bowl, add 15g of sugar, then slowly pour in boiling water little by little, stirring and kneading until you see the dough smooth, sticking together while still maintaining a moist, crumbly texture like clay.
Next, carefully break off pieces of dough and roll them into small round balls about the thickness of a finger.

Boiling tapioca pearls and mochi
Place a pot on the stove, add 750ml of water and bring to a boil, then drop in 120g of white tapioca pearls to boil for 15 minutes. After 15 minutes, when the tapioca pearls are translucent and floating on the surface, take them out and let them cool for about 10 minutes.
Next, add about 50g of brown sugar to the tapioca pearls and mix well so that the pearls absorb the sweetness.
Using the water that was used to boil the tapioca pearls, turn on the heat, wait for the water to boil, then drop the mochi in, boiling for about 2 – 3 minutes over medium heat, until the mochi balls are translucent and float on the surface, then scoop them out into a separate bowl.

Next, place 2 tea bags into a cup, slowly pour in 150ml of boiling water, and steep for 10 minutes. Carefully remove the tea bags, add 50g of brown sugar, and stir well until the sugar completely dissolves.
Gradually pour in 200ml of unsweetened fresh milk, stirring well to blend the tea and milk together.

Making the cream mixture
Add 100ml of whipping cream and 20ml of condensed milk into a cup, then use a handheld frother to whip this mixture until it becomes fluffy but still maintains a pourable consistency.
Tip: If you don’t have a handheld frother, you can use a whisk to whip the cream! -
Completion
You prepare a glass, first scoop some white tapioca pearls into the bottom of the glass, then slowly pour the milk tea until it’s nearly full to the rim of the glass, and carefully pour a layer of milk cream on top.
Finally, you place a soft mochi skewer on top to complete it. You can also add mochi balls into the milk tea glass just like tapioca pearls if you like!
