  • Choose beef bones that are bright red, feel firm to the touch, and have the characteristic smell of beef.
  • To buy the freshest beef bones, you should go to the market early in the morning when the cows have just been slaughtered, and the bones are still very fresh.
  • Avoid choosing beef bones that are purple and have an unpleasant odor.

  • Prepare the beef bones and other ingredients

    Beef bones bought should be chopped into bite-sized pieces. Next, use diluted saltwater to wash the beef bones thoroughly. Then, rinse them with water 3 – 4 more times and let them drain.

    Peel the onion and wash it clean with water, then let it drain. Wash the green onions and chop them into small pieces.

    Put a pot on the stove, add the bones to the pot, pour enough water to submerge the bones, and bring to a boil. When the water boils, blanch the beef bones for 2 – 3 minutes, then turn off the heat, remove them, and let them drain.

    Place a pot on the stove, add 1.5 liters of filtered water, the boiled beef bones, 1/2 onion, and 1 spoon of salt, then cover the pot, turn on high heat, and simmer for 1 hour.

  • Choose bones that are bright red, feel heavy in hand, and have a distinctive meat smell.
  • Avoid choosing pork bones that are pale in color, feel slimy when held, and have an unpleasant odor.

How to choose good radish

  • Choose radishes that are straight, with intact and smooth skin, and feel heavy when held.
  • Fresh radishes will still have the leaf stems firmly attached to the body, with bright green leaves.
  • Avoid buying radishes that are bruised, have many scratches on the skin, or have unusual black spots.

    When the water boils, skim off all the foam, then add 1 tablespoon of rock sugar, 1 tablespoon of seasoning, and 1 teaspoon of salt to the pot and stir well.

    Next, cover the pot, and continue to simmer for 20 minutes, then add the pork intestines and cook for another 5 minutes.

    Prepare a bowl of cold water, squeeze 1 lemon into it. Then, remove all the bones and pork intestines and place them in this bowl of water to soak for about 5 minutes, then take them out and let them drain. Cut the pork intestines into bite-sized pieces.
