- For this dish, you can use any part of the cow, such as: Brisket, beef tendon, sirloin, flank,… However, you should choose pieces of meat that have some tendon, a bit of fat, and meat interspersed for a more delicious dish.
- You should choose beef pieces that are bright in color, bright red, have white fat lines, and the fat is bright yellow.
- When you touch the meat with your hand, it should feel firm, have good elasticity, and should not be mushy or have a slimy substance on your fingers to be suitable for purchase.
- You should choose pieces of meat that have a characteristic aroma of beef when smelled, without unpleasant odors or signs of spoilage.

Beef should be washed clean, placed in a basket to drain excess water, and then cut into small bite-sized cubes using a knife.

- The beef should be cut against the grain for a more tender and flavorful outcome.
- You can place the meat in the refrigerator for about 15 – 20 minutes before cutting, helping to firm it up and making it easier to see the grain while cutting.
- Avoid soaking and washing the beef for too long in water, as this reduces its sweetness and affects the flavor.
- After purchasing the meat, use a damp cloth to absorb excess moisture from the surface, then rub it with lightly roasted ginger that has been mashed to evenly coat the meat.
- Rinse with water to effectively eliminate any unpleasant odors.

Prepare other ingredients
Carrots, onions, and potatoes should be peeled and washed clean after purchase. Use a knife to cut them into small bite-sized cubes.
Wash celery thoroughly, cutting it into pieces about 2 – 3 finger joints long. Rinse the basil leaves and let them drain.
Gently wash the white lingzhi mushrooms with clean water, separating each small mushroom, and wait for them to drain slightly.

Marinate the beef
Marinate the beef with 1 spoon of seasoning powder, a little ground pepper, and use chopsticks to mix the meat well in a bowl, letting it sit for about 15 minutes to allow the meat to absorb the seasoning evenly.

Beef Stew
Place a stove on and heat 2 tablespoons of cooking oil in a pan, then add the beef and stir-fry on medium-high heat. When the meat starts to change color to medium rare and is seared, add 4 tablespoons of tomato sauce and 3 tablespoons of oyster sauce, and mix well.
Add water to the pan until it just covers the meat, season with 1 teaspoon of sugar and 1/2 teaspoon of salt, and gently stir to help the seasonings dissolve faster. Lower the heat, cover, and simmer the meat for about 40 minutes.

Place another pan on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add all the carrots, potatoes, onions, and celery, and stir-fry on high heat for about 1 – 2 minutes.
Next, add all the white reishi mushrooms and 1 tablespoon of unsalted butter, stir-fry for another 2 minutes, then quickly turn off the heat.

Once the beef is evenly cooked, add all the briefly sautéed vegetables into the pan, add about 6 tablespoons of red wine, add 3 sprigs of thyme, cover the lid, and continue to cook for about 5 – 10 minutes. Adjust the seasoning to taste before turning off the heat.
Tip: When adding all the ingredients to the pan, you can place a piece of parchment paper under the lid, then seal it tightly. This helps the meat to soften much faster.
