How to choose good beef
- Good beef has small fibers, bright red color, is soft, the fibers are not fine, with small white tendons, and bright yellow fat. Pressing on the beef should show elasticity and firmness.
- Heifer beef will be more tender than bull beef, and young beef is better than old beef.
- Do not buy if the meat appears dull, soft and mushy, leaking water, or has a foul smell, as this indicates it has been stored too long and is not good.
How to choose delicious eggplants
- Delicious eggplants are of moderate size, not too big and not too small.
- The skin of the eggplant is smooth and slightly greenish-white, when pressed with a fingernail, it should not be too hard and have a crispness indicating good quality.
- Do not choose immature eggplants as they will not be crisp, and do not choose overripe eggplants as they will be hard and bitter.

Make the dressing for the salad
Dissolve 3 tablespoons of sugar, 1 tablespoon of clean water, and 3 tablespoons of fish sauce. Then add the juice of 4 calamondins, 1 tablespoon of minced garlic, and 1 tablespoon of minced chili, mix well.

Prepare the vegetables
The vegetables you need include lettuce, white mint, fish mint, common mint, and basil. Wash them well, drain, and then cut them into pieces about 1 finger length.
Pickled eggplants should be sliced thinly.
The remaining calamondins should be sliced thinly and the seeds removed.
Note: Remember to remove the seeds from the calamondins to prevent the salad from being bitter. -
