How to distinguish rice flour from other types of flour? Where to buy rice flour?

Currently, there are 3 types of rice flour: plain rice flour, sticky rice flour, and brown rice flour.

  • Plain rice flour is made from plain rice grains, which is the type of rice we cook daily; it has an opaque white color and is slightly off-white. This flour is commonly used to make dishes such as pancakes, rice cakes, steamed rice cakes, fried rice cakes, cow cakes, or noodle cakes.
  • Sticky rice flour is made from sticky rice grains (also known as glutinous rice), which has a natural white color, is fine, and sticky to the touch. This type of rice is used to make sticky rice and desserts.
  • Brown rice flour is made from brown rice grains and ranges in color from light brown to dark brown, with a slight fatty taste and the characteristic aroma of brown rice.

What is tapioca flour?

  • Tapioca flour is a cooking ingredient made from cassava starch; people in the South call it tapioca flour, people in the North call it cassava flour or dough flour, while people in the Central region call it filtered flour.
  • Due to its ability to create high viscosity and adhesion, cassava flour is widely used in cooking, used to create many dishes with different shapes such as various types of jelly, sweet soups, dumplings…

How to make Fresh Pho

  • Mix the flour mixture

    First, put 200g of rice flour, 100g of tapioca flour, and 1 teaspoon of salt into a bowl and mix well until the mixture is combined.

    Next, gradually add 600ml of water into the flour bowl while stirring until the flour dissolves. Then, add 1 tablespoon of cooking oil, stir again, and let the flour rest for at least 1 hour.

  • Making rice noodles

    Place a pan on the stove and heat it over medium heat. When the pan is hot, reduce the heat to low, then scoop 1 ladle of batter into the pan and shake it to spread the batter evenly.

    Next, cover the pan and wait about 2 minutes until the batter turns translucent, which indicates the rice noodle is cooked. At this point, scoop the noodles into a bowl of water to cool the noodles.

    Tip: To ensure the batter mixture is well combined, remember to stir the batter each time you scoop it.

  • Cut the rice noodles

    Next, you spread a layer of cooking oil on the cutting board and knife to prevent sticking. Then, take the noodles out, stack them on top of each other, and cut them into bite-sized strips.

    Finally, soak the rice noodle strips in a bowl of cold water and separate each strip, then pour them into a basket to drain.

    The rice noodles after being made have a moderate chewiness and transparency; you can use them to enjoy with beef pho, chicken pho, or prepare a dish of stir-fried pho, all of which are very delicious and on par with those from restaurants.

How to store fresh pho

  • Let the fresh pho cool completely, then wrap it tightly in a clean plastic bag and store it in the refrigerator for 1 – 2 days.
  • However, do not store the pho near other foods such as fruits or seafood, as it will absorb odors and lose its deliciousness.
