How to Choose Fresh Fish

  • Choose fish that have clear, bulging eyes, shiny scales, and a natural bright color. When you press lightly on the fish’s flesh, it should be firm and springy, leaving no imprint from your finger.
  • Avoid fish that have pale colors, and when you hold them in the middle, their bodies sag down, with cloudy eyes that make it hard to see inside because they have gone bad.
  • You should go to the market early in the morning to select the freshest and highest quality fish.

How to Prepare Fried Fish with Tamarind Sauce

  • Prepare Ingredients

    Buy the fish and rinse it briefly with water, then proceed to clean it, remove the intestines, and rinse it again with water to drain. After that, place the fish in a bowl with 1/2 teaspoon of salt and 1/2 teaspoon of monosodium glutamate, stir to coat the fish evenly with the seasonings, and marinate it for about 15 – 20 minutes.

    Peel the garlic and rinse the chili to drain.

    • Method 1: After cleaning the fish, you can cut it into bite-sized pieces and soak it in rice water for about 15 – 20 minutes. Then, take it out and rinse it with water.
    • Method 2: Use salt to rub on the fish, then scale it and proceed to clean the fish. Finally, just rinse the fish with water before cooking.
    • Method 3: When rinsing the fish, you can mix a few tablespoons of alcohol or white vinegar into the water, then soak the fish for about 5 minutes and rinse it with water.

    Place a pan on the stove over medium heat, add 3 tablespoons of cooking oil to the pan. Wait for the oil to heat, then add the fish to the pan and fry for about 5 minutes until golden, then flip to fry the other side for about 3 minutes, until both sides of the fish are golden, then turn off the heat and transfer the fish to a plate.

  • Making Tamarind Dipping Sauce

    Gradually add garlic, chili, and 2 tablespoons of sugar into a mortar and pound until finely mixed. Next, add the ripe tamarind and use a spoon to mash the tamarind until smooth.

    Then add 4 tablespoons of fish sauce and 2 tablespoons of water into the mortar and stir well for 3 minutes until the sugar dissolves and the fish sauce thickens. Finally, transfer everything to a bowl, slice some fresh chili into it and enjoy.

    The fried mackerel with tamarind sauce has a crispy golden skin, fragrant and sweet fish meat with a slightly chewy texture.
