How to choose fresh ingredients
How to choose fresh, safe chicken
- To save time preparing the dish, you should buy boneless chicken thighs, which are available at supermarkets.
- Choose chicken pieces that have a dry surface; when pressed, the meat should still retain its elasticity.
- Good chicken will have a light yellow color, bright coloring, and no strange smell.
- Avoid buying pieces of meat that are pale white or slightly bluish as they may have been chemically treated.
- Be careful not to buy pieces of chicken that are mushy or have a strange smell.

How to choose fresh and clean shrimp
- Choose shrimp that have a transparent shell with a slight smell of seawater, not fishy; do not buy shrimp with dark spots or uneven colors.
- You should prioritize buying shrimp that have their heads and legs tightly attached to the body, as these are fresh shrimp, not injected with additives.
- Fresh shrimp have tails that are curled together; if the shrimp’s tail is spread out, it has likely been pumped with chemicals or injected with water to make it appear plump.
- Delicious shrimp typically have legs firmly attached to the body; if you see shrimp legs turning black or no longer tightly attached to the body, do not buy them as they are no longer fresh.

How to make Fried Shrimp and Chicken Sausage
-
Prepare the ingredients
Chicken meat bought should be salted, washed clean, cut into pieces and minced. For the shrimp, peel them, remove the veins, wash them clean and let them drain (if you buy frozen shrimp, let them thaw) and then mince them.
Add the minced chicken and shrimp to a bowl, add the seasonings to marinate including: 1 tablespoon monosodium glutamate, 1/2 tablespoon chicken seasoning, 1/2 tablespoon salt, 1/2 tablespoon sugar, 1/2 tablespoon Korean chili powder, 1/2 tablespoon lemongrass powder, 1/2 tablespoon onion powder, 1/2 tablespoon garlic powder, 1/2 tablespoon ground pepper, 25gr corn starch, 7gr baking powder, 50ml cooking oil and mix well.
Wrap the bowl tightly with plastic wrap and place it in the freezer of the refrigerator for about 2 hours before grinding.
Tip:
- To make the sausage more fragrant, you can add a little dill while marinating.
- The meat must be kept cold before grinding; if you grind the meat when it is not cold, it will heat up, causing the finished sausage to be crumbly and not chewy.
-
Grind and steam the meatballs
After 2 hours, take the meat out and divide it into 5 portions for grinding. Grind until the meat is sticky and smooth.
Place a steaming pot on the stove to boil water, take 1 teaspoon of the ground meat mixture and roll it into a ball in your palm, continue rolling until all the meat is used up.
Then, steam the meatballs until cooked for about 5 minutes.
-
Fry the shrimp and chicken meatloaf
Place a pan on the stove, add 300ml of cooking oil. When the oil is hot, add the steamed meatballs to fry, reduce the heat to medium and fry until golden brown. The meatloaf cooks quickly, so it needs to be turned frequently to avoid burning.

Finished Product
The crispy outer layer and the crunchy, flavorful inside will make you fall in love! If you make a lot, you can fry them briefly, let them cool, then put them in a zip bag (food storage bag) to freeze for later use. When eating, you can take them out to dip with tomato sauce, eat hot pot, or if you’re too busy, just fry them again and they are ready to eat.
