How to choose fresh, delicious, and safe duck meat
For live ducks
- You should choose healthy ducks, with their wings close to the body, shiny feathers, and alert eyes. When preparing dishes, you should select male ducks as they usually have thicker and tastier meat.
- Avoid choosing juvenile ducks because they often have a lot of down feathers, and the meat will not be delicious when eaten. Also, avoid ducks that have laid too many eggs, as their underbelly may sag, resulting in tough meat.
- Steer clear of ducks with drooping wings, ruffled feathers, and hard stomachs as they may be sick, which could compromise health when consumed.
For pre-prepared ducks
- You should choose ducks with an evenly colored yellow skin, without spots.
- When selecting a duck, you should press the meat with your hand; if the duck meat has a good elasticity, then it is advisable to buy it.
- Opt for ducks that are meaty, fresh, and firm for better cooking results.
- Avoid pre-prepared ducks that have many bruises on the skin, mushy meat, and an unusual odor.
How to prepare Stir-fried Duck with Rice Herbs
-
Prepare the ingredients
First, use tweezers to pluck out any remaining fine feathers. Then, rinse thoroughly with salt water and a little vinegar to eliminate the fishy smell. Rinse again with clean water and use a knife to chop the duck meat into bite-sized pieces.
For the rice herbs, remove any wilted leaves and soak them in salt water for about 10 minutes. Then rinse and let them drain.
Peel and wash the garlic and shallots, then chop finely. For the horn chili, use a scissors to cut it into small pieces.
How to clean duck meat properly without a fishy smell:
- Method 1: You can crush a piece of fresh ginger and rub it over the duck meat with 30 – 50ml of white wine for about 10 minutes, then rinse thoroughly with clean water.
- Method 2: You can mix salt and rice washing water to soak the duck meat for about 10 minutes. Massage thoroughly for another 5 minutes, then rinse with clean water.
- Method 3: The simplest way is to rub the duck meat with salt and briefly grill it over a fire for about 10 minutes, then rinse thoroughly before cooking.

Marinate duck meat
Next, after washing and cutting the duck meat into pieces, you marinate it with 1 teaspoon of white wine, 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of chicken bouillon, and minced garlic and onion.
Add a bit of pepper and mix well. Then let it sit for about 30 minutes for the meat to absorb the spices.
-
Stir-fry duck meat
First, place a pan on the stove and add 1 tablespoon of cooking oil. When the oil is hot, add a little minced garlic and sauté until fragrant.
Then, pour the marinated duck meat into the pan and stir-fry for about 3 minutes. When the meat starts to become slightly rare, cover the pan and let it cook for about 5 minutes until the meat is fully cooked inside.
Next, open the lid, stir well, and cover again for another 5 minutes. At this point, the duck meat will begin to render fat; open the lid and use chopsticks to stir well.
When the duck meat starts to tighten and is slightly charred at the edges, add chili and Vietnamese balm, then continue to stir well. Finally, add 2 tablespoons of fish sauce for a more fragrant dish, adjust the seasoning to taste, then turn off the heat and serve on a plate.
