  • You should choose pieces of meat where the fat and meat are tightly adhered together and hard to separate, the ratio of fat to meat should be balanced to make the dish tastier.
  • Good pieces of meat will have a skin layer about 1/2 the length of your finger; avoid pieces with skin that is too thick, as the meat will be tough and not delicious.
  • Choose pieces of meat that are pink or light red, have good elasticity when touched, and the surface of the meat is dry, which usually ensures much better quality.
  • Avoid buying pieces of meat with unusual colors, greenish, purple, or yellowish, that feel soft and mushy or too tough, with a strong unpleasant smell.

  • You should choose lemongrass stalks that have bright colors, with the lemongrass leaves tightly wrapped around each other, as this indicates fresh, newly cut lemongrass.
  • Fresh lemongrass feels heavy when held, and has a strong, characteristic fragrant smell when sniffed.
  • Do not buy lemongrass that is bruised, wilting, or has no smell or a faint smell; these stalks are old and about to spoil.

How to make fried pork belly with lemongrass and chili using an air fryer

  • Prepare the ingredients

    Remove the outer layer of the lemongrass, cut off the roots with a knife, wash thoroughly and chop finely.

    Use about 3 chopped chili peppers.

    Wash the pork belly with water and rub it with salt a few times, then rinse again with clean water and let it drain.

    Cut the pork belly into pieces about the length of a finger and a thickness of 1/2 of a finger.

  • Marinating the meat

    Put the drained meat into a bowl, add all the minced lemongrass and chili, and marinate with 2 teaspoons of fish sauce, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of seasoning powder.
