How to choose delicious entrails
- For the dish of stir-fried entrails with turmeric, you can use the pig’s tail (old entrails) or young entrails to prepare the dish, both will provide a delicious flavor.
- When buying entrails, you should choose a set that has small intestines, plump and round, with a pinkish-white color.
- You can use your hand to squeeze a piece of entrails to check the fluid inside; if the entrails have a milky white fluid and no fishy smell, it means the entrails are good.
- You should not choose pig entrails that show signs of sliminess, have a fishy smell, or have a pale blue or dark black color.
How to make Stir-fried entrails with turmeric

Prepare the ingredients
When you buy pig’s tail, use salt to scrub off the slime, then rinse with clean water. Next, soak the pig’s tail in 2 tablespoons of white wine for about 10 minutes, then rinse several times with water.
Bring a pot of boiling water mixed with 2 tablespoons of vinegar to a boil and briefly blanch the pig’s tail for about 3 minutes, then turn off the heat. Cut the pig’s tail into bite-sized pieces about 1 – 2 finger widths thick.
Wash the pig’s liver with clean water, then soak it in 200ml of unsweetened fresh milk for about 10 minutes, then rinse again with clean water. Use a knife to cut the pig’s liver into bite-sized pieces about 1/2 finger width thick.
After washing the onion with clean water, peel it and then cut it into wedges.
After washing the chives and Vietnamese coriander with water, use a knife to cut the chives into sections, and pluck the leaves of the Vietnamese coriander.

Stir-fry Pork Intestines
Place a pan on the stove, add 1 tablespoon of cooking oil and heat it, then add 1 tablespoon of minced garlic, 1 tablespoon of minced chili, and 2 tablespoons of freshly ground turmeric, and sauté until fragrant. Next, add the pork tail and liver and stir-fry until they firm up, then add the pork blood and stir gently for about 4 minutes.
Then, add 2 teaspoons of sugar, 1 teaspoon of seasoning powder, and 1 tablespoon of fish sauce to the pan, stir all the ingredients for about 10 minutes, then turn off the heat.

Stir-fried noodles
Place a pan on the stove, add 1 tablespoon of cooking oil and wait for the oil to heat up, then add 1 tablespoon of freshly ground turmeric and sauté until fragrant.
Next, add the chopped onion, chives, and Vietnamese coriander to the pan and stir the mixture for about 3 – 4 minutes.
Add 500g of noodles and the prepared pork intestines from the previous step into the pan and stir all the ingredients together for about 2 – 3 minutes before turning off the heat.
Season to taste and enjoy.
