Potatoes 2 pieces (about 300g) Wheat flour 50 g Tapioca flour 50 g Cooking oil 100 ml White sesame 20 g Sugar 2 teaspoons Salt 1 teaspoon

How to Choose Good Potatoes, Not Starchy

  • You should choose potatoes with yellow skin as they are usually sweeter and more nutritious than those with white skin.
  • Potatoes should feel heavy, firm to the touch, with smooth, intact skin, without spots, pests, black eyes on the skin, not rotten, and without any liquid oozing out.
  • Select potatoes that do not have deep dents for easier and quicker preparation before cooking.
  • Avoid buying potatoes that have sprouted, have turned green on the skin, are shriveled, or feel soft when pressed, as these have been stored for too long and are not good for health.

How to prepare Fried Potatoes with Wheat Flour and Tapioca Starch

  • Prepare the ingredients

    Peel the potatoes, cut them into bite-sized pieces, and place them in a bowl of clean water mixed with 10g of wheat flour and 1/2 teaspoon of salt to soak for about 5 minutes.

    Then remove the potatoes and rinse them with clean water about 2 – 3 times, then let them drain and put them back in the bowl.

    Tip: Soak the peeled potatoes in rice flour water to remove the sap and prevent browning.

  • Coating the potatoes with flour and sesame

    Add 2 teaspoons of sugar and 1/2 teaspoon of salt to the drained potatoes, and mix until the sugar and salt dissolve.

    Next, gradually sprinkle the mixture of 50g of tapioca starch and 40g of wheat flour into the bowl, mixing well to coat the potatoes evenly, then add in the sesame seeds and mix thoroughly.

  • Fry the potatoes

    Place a non-stick pan on the induction stove with 100ml of cooking oil; when the oil is hot, add the coated potatoes and fry over medium heat.

    Fry until you see the potatoes firming up, then reduce the heat to low and fry until the potatoes are golden, then remove and let them drain.
