Ingredients for Lemongrass Stir-Fried Shrimp For 2 people

Shrimp 300 g Lemongrass 4 leaves (sliced thin) Green onions 4 stalks (chopped) Shallots 3 bulbs (chopped) Garlic 1 bulb (crushed) Pork fat 3 tablespoons (or cooking oil) Common spices a little (salt/ sugar/ monosodium glutamate)

How to choose fresh and sweet shrimp

  • Fresh and good shrimp will have a straight or slightly curved shape, with the head and legs firmly attached to the body.
  • When buying shrimp, you should choose those with a hard, transparent shell, tightly attached to the meat, and the tail is folded together, especially still having the smell of the sea instead of a fishy smell.
  • Do not buy if the shrimp has a fishy smell, has dark patches on the shell or uneven colors, is slimy, and the tail is spread out, with the head and legs not firmly attached to the body. These are usually shrimp that have been injected with chemicals, water, or have gone bad.

How to cook Stir-fried Shrimp with Lime Leaves

  • Prepare and marinate the ingredients

    After purchasing the shrimp, use scissors to cut off the head and legs, remove the intestinal tract, then wash thoroughly and drain.

    Next, add the prepared shrimp and 1 tablespoon of seasoning powder, 1/2 teaspoon of monosodium glutamate into a bowl and mix well, marinating for 15 minutes to let the shrimp absorb the seasoning.

  • Sauté the shrimp

    After 15 minutes of marinating, add the shrimp to a non-stick pan and place it on the gas stove, stirring constantly over high heat for 5 minutes until the shrimp releases water and becomes firm.

  • Sautéed Shrimp

    First, place a new pan on the stove, then add 3 tablespoons of pork fat into the pan and stir well.

    When the fat is hot, add all the finely chopped shallots and crushed garlic to sauté until fragrant, then transfer the previously sautéed shrimp to this pan and continue to stir-fry until the shrimp shells are crispy and shiny.

    When the shrimp starts to release water, continue to stir the shrimp over medium heat until the shrimp are dry. At this stage, to make the shrimp a more attractive red color, add 1/2 tablespoon of seasoning powder and 2 tablespoons of sugar, then stir well.

    After the shrimp have dried out, add 2 tablespoons of water to the pan and continue to stir well. Then increase the heat and stir evenly so that the shrimp absorbs the seasoning.

    Finally, add all the finely chopped green onions and shredded lime leaves to the pan, and stir for about 2 more minutes. Before turning off the stove, you can taste and adjust the seasoning to your liking.

    Tip: If you want the dish to have a more appealing color, you can add a little bit of coloring sauce.

    Stir-fried shrimp with kaffir lime leaves has an eye-catching color, the shrimp are shiny red, infused with spices, especially still retaining their natural sweetness. Additionally, the aroma of kaffir lime leaves makes the dish even more appealing.
