Prepare the sweet potatoes
First, with 300g of sweet potatoes purchased, you use a peeler to peel the skin, rinse briefly with clean water, drain, and then use a knife to cut into bite-sized pieces.
At the same time, prepare a bowl of cold water mixed with 2 spoons of tapioca flour and 2 teaspoons of salt. Then, soak all the cut sweet potatoes in this mixture for about 10 minutes.
Next, drain the water and rinse the sweet potatoes a few times with clean water, then let them drain.

Mix the flour with black sesame
You gradually add the ingredients into a bowl including 100g of rice flour, 50g of wheat flour, 20g of glutinous rice flour, 2.5 tablespoons of sugar, and 1 teaspoon of turmeric powder, using a spoon to mix well.
Next, you slowly pour in 170ml of unsweetened fresh milk, while continuously stirring in one direction, until the mixture becomes smooth and thick.
After that, you add 1 teaspoon of black sesame, stir again with a spoon, and let the mixture rest for about 10 minutes.
Finally, you proceed to add all the drained sweet potato into the mixture, using chopsticks to stir evenly so that the sweet potato is fully coated in the batter.

At the same time, you place a pot on the stove with 400ml of cooking oil and heat it on high. Once the oil is bubbling, you gradually add the sweet potatoes that have been coated in flour and fry for about 5 minutes.
