How to prepare Stir-fried Tofu with Vegetables

Prepare the ingredients
Soak shiitake mushrooms in warm water for about 1 – 2 minutes to clean off any dirt and dust on the mushroom stems. Then take them out and wash thoroughly under running water.
Cut off the stems of the shiitake mushrooms and slice them into thin pieces for easy eating.
Ways to prepare fresh shiitake mushrooms- Method 1 (boiling mushrooms): Use a knife to cut off any dirty stems (if any), then boil the mushrooms in a pot of boiling water for about 3 minutes, then drain.
- Method 2 (soaking mushrooms): You can soak shiitake mushrooms in warm water for about 1 – 2 minutes to clean off any dirt, then rinse with cold water and cut off the mushroom stems. You can also wash the mushrooms with rice water to eliminate the pungent smell and help retain their natural flavor.
- Method 3 (washing mushrooms): After cutting off the dirty soil at the base, soak them in diluted salt water for 2 minutes, then rinse thoroughly with water.
Wash the bell peppers, remove the seeds, and cut them into small strips. Peel the onion and cut it into wedges that are similar in size to the bell pepper.

Prepare and fry the tofu
The tofu bought should be rinsed briefly with water and then allowed to drain completely, after which it should be cut into slices about 1/2 finger thick.
Put a pan on the stove and add 2 tablespoons of cooking oil, heating it up. When the oil is hot, add the tofu and fry for 5 – 7 minutes over medium heat until the tofu is golden and crispy, then remove it to drain the oil.
After frying, cut the tofu into long strips equivalent to the vegetables.

Stir-fry tofu with vegetables
In the same pan with the frying oil for the tofu, heat the pan and add the vegetables and mushrooms, stir-frying for 3 – 5 minutes on high heat. Season with 1 teaspoon of salt and stir until the onions begin to turn translucent and the bell peppers are soft. Then, add the tofu and stir well.
Add 4 teaspoons of soy sauce and 4 teaspoons of corn sugar, and stir well. Stir-fry for about 2 – 3 minutes so that all ingredients absorb the seasoning, then turn off the heat. Add 1 tablespoon of sesame oil and 1 teaspoon of toasted sesame seeds, toss to coat evenly with the seasoning and adjust the taste, then plate.
Tip:- Since sesame oil is very flammable and can make the dish bitter, you should turn off the heat before adding it and stir well to maintain its delicious aroma!
- If you don’t have corn sugar, you can substitute it with 4 tablespoons of liquid sugar or 2 tablespoons of white sugar.
