  • You should choose ginger that is still whole, and when smelling, it has the characteristic aroma of ginger.
  • Avoid buying ginger with signs of spoilage; when held, the ginger feels mushy (some parts hard, some soft), and avoid buying ginger with too many small branches. These are old ginger roots that are fibrous, and when cooked, the dish will not taste good.

  • Prepare the ingredients

    To remove dirt and eliminate the fishy smell, after buying the chicken, pluck any remaining feathers (if any), rub the chicken with salt and a little lemon juice for about 3 – 5 minutes, then rinse thoroughly with water and let it drain.
