Ingredients for Whole Grain Bread with Raisins Serves 4

Whole wheat flour 300 gr Unsalted butter 35 gr Instant yeast 4 gr Honey 35 ml Egg yolk 1 piece Unsweetened fresh milk 230 ml Salt 1 teaspoon

How to make Whole Wheat Raisin Bread

  • Mix the dough

    First, add 300g of whole wheat flour and 1 teaspoon of salt into a bowl and mix well.

    Next, take a new cup, add 4g of instant yeast, 35ml of honey, 10ml of water, and stir well until dissolved.

    Then, add the yeast mixture and 220ml of unsweetened fresh milk into the bowl of flour and mix until the dough sticks together to form a mass. After that, cover the dough tightly and let it rest for 10 minutes.

  • Kneading and Fermenting the Dough

    After the dough rests for 10 minutes, place the dough on the table and knead using the Folding and Stretching technique.

    First, fold the dough over, then use the palm of your hand to press and stretch the dough away. Note to press and stretch the dough away, not to press down. Next, rotate the dough 90 degrees and repeat the two steps for about 5 minutes.

    After 5 minutes, evenly spread 35g of unsalted butter on the surface of the dough and continue to repeat the process for another 10 minutes. When the dough becomes a smooth, elastic ball that doesn’t stick to your hands, and when you press your finger into it, it should bounce back.

    How to recognize if the dough is satisfactory:

    • The dough is smooth and elastic.
    • The dough does not stick to your hands: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick.
    • The dough can be stretched into a thin film without tearing.
    • Check the dough using the Windowpane test: tear off a piece of dough and stretch it out. If the dough forms a thin film that is not easily torn and light can pass through, it is satisfactory.

    Next, shape the dough into a ball and place it in a bowl. Then, cover the bowl tightly with plastic wrap and let it ferment in the refrigerator for 15 hours.

  • Shaping the bread

    You take the dough out and let it come to room temperature. Next, knead gently to push all the air bubbles out.

    Then, divide the dough into 4 equal parts and roll them into balls. After that, roll each part flat, evenly spread the raisins on top, and roll it back into a ball.

    You prepare a mold lined with parchment paper and place the shaped dough balls in it. Finally, cover with a cloth and let it rise for the second time for 45 minutes until the dough doubles in size.

  • Baking the bread

    You need to preheat the oven to 180 degrees Celsius for 10 minutes.

    Next, whisk 1 egg yolk with 10ml of fresh milk. Then, evenly brush this mixture over the surface of the bread.

    Finally, place the bread in the oven and bake for 30 minutes at 170 degrees Celsius.

    The whole grain bread with raisins just out of the oven is filled with the aroma of butter.

    The bread has an attractive brownish-yellow color, is chewy and soft when torn apart, with a moderately sweet and nutty flavor. Additionally, there is the sweet and sour taste of raisins. This is truly a delicious and healthy treat!
