How to make Whole Wheat Bread using an Air Fryer

  • Mixing the dough

Put 250g of whole wheat flour and 1/2 teaspoon of salt into a bowl and mix well.

Then, add 3g of instant yeast, 10ml of cooking oil, 110ml of water, and continue mixing until the dough is sticky.

  • Kneading the dough

Place the dough on the table and knead using the Folding and Stretching technique.

First, fold the dough, then use the palm of your hand to press and stretch the dough away. Note that you should press and stretch the dough away and not press down. Next, rotate the dough 90 degrees and repeat the two steps for about 15 minutes.

When the dough becomes smooth, elastic, and does not stick to your hands, pressing your finger into it should show some elasticity.

How to tell if the dough is ready:

    • The dough is smooth and elastic.
    • The dough does not stick to your hands: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick.
    • You can stretch the dough into a thin sheet without tearing it.
    • Check the dough using the Windowpane test. Take a piece of dough, stretch it out. If the dough forms a thin membrane that is not easily torn and light can pass through, it is ready.

  • Dough Proofing

Place the dough in a bowl, cover tightly with plastic wrap for 40 minutes – 2 hours (depending on room temperature) until the dough has doubled in size.

Tip to know the dough is ready: Press your hand deeply into the dough; if the dough retains the indentation, it indicates that it has proofed properly.

  • Shaping the Bread

Gently knead the dough again for 1 minute, shape it into a ball, and place it into a loaf pan lined with parchment paper. Cover the pan tightly with plastic wrap and proof for the second time for 40 minutes – 2 hours until the dough has doubled in size.

Use a knife to make 3 shallow cuts, brush a thin layer of water, and sprinkle black and white sesame seeds on top of the dough.

Take each small portion of dough in your hands, then shape and roll the dough into round balls.

Finally, place the dough on parchment paper and cover it with plastic wrap, and let it proof for an additional 30 – 60 minutes (depending on room temperature).

Tips for successful execution

  • If you do not use instant dry yeast, you must activate the yeast with warm water or milk at 35 – 38 degrees Celsius, stir well and let it sit for 5 – 10 minutes until the yeast expands to form a texture similar to crab bricks. Do not let it get hotter as it will kill the yeast or weaken its activity).
  • If using instant yeast, it is advisable to use golden instant yeast for fatty and sugary bread types.
  • You should knead properly to form gluten bonds, so that the bread texture is chewy and soft after baking.

What is whole grain flour? The difference between whole grain flour and regular flour

  • Whole grain flour is the bran, germ, and endosperm of the wheat grain after it has been ground.
  • Whole grain flour has a light brown color, is rich in nutrients, and contains less gluten, while regular flour is white because it is made only from the endosperm and contains more gluten.
  • Whole grain flour has a lower glycemic index compared to regular flour.
  • Whole grain flour also absorbs more water compared to regular flour. Additionally, the shelf life of regular flour is longer than that of whole grain flour.
