Whole wheat flour 350 gr All-purpose flour 100 gr Rolled oats 155 gr Fast-acting yeast support powder 3 teaspoons Instant yeast 8 gr Honey 2 tablespoons Unsalted butter a little White sesame a little Salt 1/2 teaspoon

How to choose delicious rolled oats

  • You should choose oats that have white grains with a slightly yellow striped pattern around the cracked husk. Buy oats that have a light sweet aroma, with whole grains not broken down by pests.
  • You should opt for oats packaged carefully, with fresh grains that are not moist, and choose brands that are still within the expiration date. Avoid purchasing if the packaging is torn, if the oats are moldy or have an unpleasant smell.

What is whole wheat flour? The difference between whole wheat flour and regular flour

  • Whole wheat flour (known in English as Whole Wheat Flour). This type of flour is processed by grinding or crushing the entire wheat grain, including: the bran (the outer shell), the germ, and the endosperm. Therefore, whole wheat flour retains most of the nutrients and characteristic flavors of the wheat grain.
  • Whole wheat flour and regular flour differ in the use of components from the wheat grain during production. That is, whole wheat flour is made from the entire part of the wheat grain (including the bran, germ, and endosperm), while regular flour (refined white flour) is made from the endosperm. As a result, the nutritional value, color, and flavor of these two types of flour will be different.

How to make whole grain oatmeal bread

  • Mix the starter ingredients

    Add 100ml of warm water, 2 tablespoons of honey, 8g of instant yeast, and 100g of all-purpose flour into a bowl and stir well, letting the mixture sit for 15 minutes.

    Note:

    • The water temperature to activate the yeast should be between 32 – 38 degrees Celsius (not exceeding 40 degrees Celsius). If the temperature is too high, the yeast will die or be weak.
    • To check if the yeast is still active, after about 10 minutes of activation, if the yeast rises forming a pattern like crab bricks, it is ready.

  • Mix the oatmeal flour

    Add 150g of rolled oats to a blender and blend until finely ground into flour.

    In a large bowl, add 250ml of water, 1/2 teaspoon of salt, 350g of whole wheat flour, 150g of finely ground oats, 3 teaspoons of fast-acting yeast, and the starter mixture.

    Then use your hands to mix thoroughly so that all the ingredients are combined.

  • Kneading and proofing the dough for the first time

    Place the dough on the table and knead it using the Folding and Stretching technique.

    First, fold the dough, then use the heel of your hand to press and stretch the dough away. Note to press and stretch the dough away, not down. Next, rotate the dough block by 90 degrees and repeat the two steps above for 15 minutes.

    After that, shape the dough into a ball, place it in a bowl, cover tightly with plastic wrap, and proof for the first time for 30 minutes at room temperature.

  • Kneading and proofing the dough for the second time

    After 30 minutes, lightly knead the dough again to expel any air inside.

    Evenly brush oil into the baking pan, then spread the dough evenly inside and proof for the second time for another 40 minutes.

    Once the dough has risen evenly, brush a little melted unsalted butter on top of the dough, sprinkle with the remaining 50g of rolled oats, and a little white sesame before baking.

  • Baking oatmeal bread

    Preheat the oven to 180 degrees Celsius for 15 minutes.

    Place the bread pan in the middle of the oven, then place a bowl of water underneath. Next, close the oven and bake the bread for 50 minutes at 180 degrees Celsius.

    Tip: Placing a bowl of water in the oven will help create humidity and prevent the bread from drying out.

  • Final Product

    Whole grain oatmeal bread has a light buttery aroma and the characteristic scent of whole wheat flour, the bread crumb is dense, and when torn apart, it is soft and chewy, with a nutty and creamy taste.

    This bread is delicious when paired with peanut butter or strawberry jam, orange jam is absolutely delicious!
