How to make Green Tea Pudding

  • Whisk the egg yolks

    Separate 2 eggs, take the yolks and put them in a bowl, add 50ml of fresh milk into the bowl, and use a whisk to beat the mixture until well combined. The mixture should be smooth and well-blended.

  • Cook the milk mixture

    Dissolve 15gr of green tea powder in about 15ml of water. Soak the gelatin sheets in water for about 15 minutes until soft, then remove and let them drain.

    Turn on the stove to low heat, add 150ml of whipping cream, 50ml of fresh milk, and 50gr of granulated sugar into a pot, use a whisk to mix well, then add the beaten eggs from above into the pot, stirring continuously.

    Add the 2 softened gelatin sheets into the pot, continue to add the prepared green tea powder mixture, and stir continuously until everything is dissolved; when the mixture is completely dissolved, turn off the heat.

    Strain the cooked mixture through a sieve for a smoother texture; the pudding will be silkier.

    Note:

    • Add the eggs to the pot when the mixture in the pot is not hot yet, otherwise, the eggs will curdle.
    • Stir the ingredients over low heat until the mixture is completely dissolved. Be careful not to boil it as it will cause the eggs to cook quickly and create holes in the cake.

  • Pour the pudding into cups or molds

    Pour the cooked mixture into small cups or molds, let the pudding cool and chill for about 40 – 60 minutes until it sets and can be used.

  • Beat eggs with cream cheese

    First, use a flat whisk to mash 100g of cream cheese until smooth. Then, add 2 egg yolks and continue to mix well until the mixture is combined.

    Put a little cold ice water into a bowl, add 4 sheets of gelatin and soak until soft for 15 minutes. After 15 minutes, remove the gelatin and squeeze tightly by hand to dry it.

    Next, add 400ml of unsweetened fresh milk and 8g of matcha powder into a pot, then stir well to dissolve the powder. After that, place this pot on the stove and cook the mixture over low heat until warm, then turn off the stove.

    Tip: To prevent fresh milk from deteriorating and losing nutrients, you should only heat the mixture until it steams, do not let it boil.
