What is green tea powder? Distinguishing between matcha powder and green tea powder
- Green tea powder is a type of powder made from 70% young tea leaves and 30% tea buds, produced with a simpler process compared to matcha powder: picking tea, not removing the veins of the leaves, drying, and grinding with industrial machines.
- Matcha powder is a fine powder made from 100% young buds of the green tea plant. This powder differs significantly from green tea powder in nutritional value as well as price, because green tea powder is only ground from 30% young tea buds and the remaining 70% is young tea leaves.
- Matcha powder has a bright green color and a sweet aftertaste that is different from green tea powder, which has a dark green color, may be slightly yellowish, and has a bitter astringent taste.
- Besides buying green tea powder outside, you can also make green tea powder at home following the very simple guide from TasteVN to ensure quality.

How to make Green Tea Yogurt using a Rice Cooker
-
Dissolve the green tea powder
First, add 5g of green tea powder and 2 tablespoons of water into a bowl, then stir well until the powder completely dissolves.
Next, let the mixture sit for about 10 minutes so that the powder settles at the bottom of the bowl, and then pour off the clear liquid from the top.
If you still haven’t extracted all the clear liquid on the first try, you can let the mixture sit for another 10 minutes and then continue to pour off a second time.
Tip: Straining the liquid this way will help the yogurt have a beautiful green color without the bitter taste of green tea! -
Mix the milk mixture
Next, add 190g of condensed milk and 300ml of boiling water into a bowl, then stir well to combine the mixture.
Then, add 220ml of unsweetened fresh milk and stir once again.
-
Prepare the yogurt mixture
Stir the yogurt box thoroughly to thin it out, then pour it into the condensed milk mixture and stir well.
Next, slowly pour the green tea into the bowl, stirring as you pour to blend the mixture.
Note: Before adding the yogurt starter, you need to ensure that the condensed milk mixture is warm but not too hot (around 32 – 40 degrees Celsius) to avoid killing the yeast and failing to ferment successfully. -
Ferment the yogurt
Pour the green tea yogurt mixture into the jar, cover it, and place it in the rice cooker.
Use a condensed milk can to measure water at a ratio of 2 hot : 1 cold, then pour it into the rice cooker so that it submerges more than 2/3 of the height of the yogurt jar.
Finally, tightly close the rice cooker lid and let it ferment for 8 hours. After 8 hours, cool the yogurt in the refrigerator before enjoying.
Tip: During the fermentation process, do not open the rice cooker lid. -
Final product
Green tea yogurt made with a rice cooker has a thick and creamy consistency, melting in the mouth, leaving a sour and sweet aftertaste with a hint of the aromatic bitterness of green tea, which is both unusual yet incredibly delicious.
Tips for successful yogurt making and storage
- The starter yogurt is yogurt that has been packaged, which you can buy at the supermarket or grocery store.
- The starter yogurt should be left at room temperature before adding it to the milk. Stir in one direction only; the more evenly you stir, the smoother and tastier the yogurt will be.
- The ratio of water for yogurt incubation is 2 hot to 1 cold and must cover 2/3 of the yogurt jar or bag.
- The ideal temperature for incubating the culture will range from 35 – 48 degrees Celsius; if it’s too low, the yogurt will not ferment, or if it’s too high, above 54 degrees Celsius, the culture will die.
- Do not incubate for more than 8 hours as it will make the yogurt too sour and unappetizing.
- Storage method: Put the yogurt in the refrigerator or freezer refrigerator and consume within 7 – 10 days.
