Soak tapioca starch
After purchasing tapioca starch, soak it in water for 1 hour to allow it to expand and soften.
Then, boil the tapioca starch for 15 minutes until cooked. After boiling, remove and rinse the tapioca starch with cold water to prevent it from sticking together and let it drain.

Cooking Coconut Milk with Tapioca Pearls
With 200g of grated coconut, squeeze the first time with 200ml of water and then filter through a sieve to obtain 200ml of coconut milk. After that, filter the grated coconut two more times, each time with 200ml to collect 400ml of diluted coconut water.
Place a pot on the stove and add the diluted coconut water, bring to a boil, then add 2 tablespoons of sugar and 1 teaspoon of salt.
Tip: You can adjust the sugar according to your family’s taste, but don’t forget to add salt to the coconut milk to enhance its flavor!Dissolve 50g of tapioca flour in a bowl of water, stir well until the tapioca flour is dissolved, then gradually pour it into the pot of diluted coconut water. Stir continuously to ensure the tapioca flour is evenly mixed in the coconut water.
Cook for about 5 minutes on low heat until this mixture thickens.
Next, add the soaked tapioca pearls to the diluted coconut water mixture, stir well, and cook for another 2-3 minutes before adding the coconut milk. Bring the coconut milk mixture to a boil, then turn off the heat.

Grill the banana on charcoal for 15 – 20 minutes until the banana peel turns black and a fragrant smell is released. Grilling on charcoal will help the banana smell better!
