Ingredients for Bamboo Tube Grilled Beef For 2 people

Beef 300 gr Lemongrass 4 stalks Vietnamese coriander 100 gr Pandanus leaves 1 bunch (can be replaced with banana leaves) Fresh ginger 1 piece (crushed) Common spices a little (pepper/salt/monosodium glutamate/seasoning)

How to choose fresh and delicious beef

  • It is advisable to choose female beef for better flavor than male beef. Additionally, young beef is also preferred by many people due to its good meat quality.
  • Fresh beef always has a red color with white streaks interspersed, and the fat is bright yellow. The meat fibers are small and not too smooth when looked at.
  • When pressed, the meat feels firm, not mushy, and has good elasticity.
  • Do not buy meat that has turned pale green or dark red, with fat that is dark yellow, especially if there are tiny spots on the surface and feels slimy to the touch.
  • Also, avoid buying meat that has a strong unpleasant odor as it indicates the meat has been stored for too long.

How to prepare Bamboo Tube Grilled Beef

  • Prepare and marinate the beef

    After purchasing the beef, you can remove the smell by rubbing smashed ginger all over the meat and then rinsing it with clean water, then cut the meat into thin slices suitable for eating.

    Peel off the dry outer leaves of the lemongrass, wash it clean, and then slice it thinly. Pick the basil leaves, discarding any wilted or damaged leaves, wash them clean, and let them drain.

    Put the lemongrass and basil leaves into the mortar to pound them finely, then mix them with the beef along with 1 teaspoon of pepper, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of salt.

    Mix well for the ingredients and spices to blend together. Marinate the meat for 30 minutes for it to absorb the flavors evenly.

    How to remove the smell of beef

    • Method 1: Soak the beef in white wine for 15 minutes, then rinse it with clean water.
    • Method 2: Put the beef in a pot of water, heat for about 3 – 5 minutes, then take it out and rinse the meat to reduce the smell. Note that you should only heat it to about 50 degrees Celsius, not boil it.
    • Method 3: Use lemon or vinegar to rub on the piece of beef for 5 – 7 minutes, then rinse with clean water.

  • Stuff the meat into the bamboo tube

    Wash the bamboo tube and pandan leaves thoroughly on both inside and outside, then dry.

    After marinating for a while, the beef has absorbed the seasoning evenly, place the meat inside the bamboo tube, leaving about 4cm at each end of the tube. Use the cleaned and dried pandan leaves or banana leaves to tightly plug both ends of the tube to prevent the meat from falling out.

  • Grilling Beef

    You light the charcoal until it’s hot and place the grill on the stove. When the charcoal is burning well, you place the bamboo tube stuffed with meat on the grill.

    During the grilling process, turn the tube evenly so that the meat cooks well. Grill the beef for about 20 – 30 minutes, and when you see the beef releasing juices and emitting a fragrant aroma, remove the tube from the grill.

    Use a knife to split a piece of the bamboo tube to reveal the grilled meat inside and get ready to enjoy!
