Sticky rice 300 gr Mung beans 1/2 cup Coconut milk 1/2 cup Chicken thigh mushrooms 300 gr Vegetarian fish sauce 2 tablespoons Vegetarian sate 2 tablespoons Chili sauce 2 tablespoons Tamarind juice 2 tablespoons Herbs (culantro; cilantro a little Herbs a little (culantro; cilantro) Chili 1 piece Palm sugar 4 tablespoons

How to choose fresh and delicious chicken thigh mushrooms

  • Fresh and delicious chicken thigh mushrooms will have bright colors and a length of about 12 to 15 cm; if they are too long, the inside will be spongy.
  • You should choose mushrooms that have a round cap, brown color, shiny, with no scratches or tears, and no bruises or wrinkles.
  • If they are fresh, they will have a thin layer of fuzz on top of the cap. The stem should be white, looking and feeling very firm, with a uniform color.
  • If still fresh, chicken thigh mushrooms will have a very distinctive aroma like almonds. Do not choose mushrooms that have a bad smell or are bruised.

  • Cooking Sticky Rice

    – Soak the glutinous rice and mung beans overnight.

    – Then prepare a pot (to cook sticky rice) and put 300 grams of glutinous rice along with 1/2 cup of soaked mung beans to steam for 20 – 30 minutes until the rice is cooked, then pour 1/2 cup of coconut milk on top and stir well.

    – Clean the chicken leg mushrooms, slice them, and score them in a checkerboard pattern, then blanch the mushrooms in boiling water for about 2 minutes to make it easier to skewer them for grilling.
