- Fresh and delicious chicken thigh mushrooms will have bright colors and a length of about 12 to 15 cm; if they are too long, the inside will be spongy.

– Clean the chicken leg mushrooms, slice them, and score them in a checkerboard pattern, then blanch the mushrooms in boiling water for about 2 minutes to make it easier to skewer them for grilling.
