How to Choose Fresh and Delicious Cartilage Ribs
- Choose pieces of ribs that are fresh, with a natural light pink color of pork, which will be very tasty.
- When buying, use your hand to press to check the meat. If it has good elasticity, then it is indeed good cartilage ribs.

Prepare the Cartilage Ribs
Wash the ribs with diluted salt water, then cut them into bite-sized pieces.

Marinate the Cartilage Ribs
Marinate the ribs with 1 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of garlic powder, 1 tablespoon of oyster sauce, 1 tablespoon of honey, and 1 teaspoon of chili powder. Use your hands to mix well so that the ribs absorb the spices, then marinate for 30 minutes.

Grill the ribs
Add 2 teaspoons of cooking oil to the grill pan and use a brush to spread the oil evenly. Place the marinated ribs on the grill, and while grilling, continuously turn them to cook both sides evenly.
Tip: If you don’t have a grill, you can use a charcoal stove to make the dish even more authentic. -
Make the dipping sauce
Heat a pan, add 2 tablespoons of cooking oil and sauté 1 tablespoon of minced shallots and 1 tablespoon of minced garlic until fragrant. Once fragrant, add 100ml of tamarind juice, 2 tablespoons of sugar, and 1 teaspoon of chili powder, and stir until the ingredients dissolve completely.
Tip: You can replace tamarind juice by taking 1 teaspoon of block tamarind and mixing it with warm water to extract the juice! -
