How to choose good quality quail eggs

Prepare the ingredients
The sausages you bought should be peeled, sliced into bite-sized pieces or shredded as you like. Clean the green onions, and use a knife to chop them finely. Peel the shallots, wash with water, and slice them thinly.
Place a pan on the stove, add 2 tablespoons of cooking oil and heat over medium heat. When the oil is hot, add all the shallots and stir continuously for about 5 – 7 minutes until they turn golden and fragrant, then turn off the heat and transfer to a bowl.
Use the oil from frying the shallots to pour into the bowl with the prepared green onions and mix well to make the onion oil.
Note: When you just take the fried shallots out of the pan, immediately pour the remaining hot oil into the bowl with the green onions, because if the oil cools down, the onion oil will lose its aroma. -
Grilled Egg Cups
Place charcoal in the oven, light it until it glows red, then place a grill rack on top, and set a small aluminum mold (or cup) on it.
Wait until the mold is hot, then add 1/2 teaspoon of butter. Once the butter melts, add 2 quail eggs, a bit of chopped green onion, dried shrimp, and 2 slices of sausage in order.
Grill for about 1 – 2 minutes, once the eggs are cooked, add fried onions and a bit of cheese on top of the eggs, then grill for another 2 minutes before adding some mayonnaise to your liking and chili sauce according to your preferred spiciness.
Continue grilling for about 1 – 2 minutes until the eggs puff up completely, and your dish is ready. Take it down and enjoy!
