  • You should choose squid that has a shiny color. The brown part will be dark brown, while the body of the squid will be opaque white like milk.
  • When you touch the body of the squid, it should feel firm, elastic, not leave any dents, and quickly return to its original shape.
  • In addition, fresh squid will have clear eyes, not bulging out or leaking fluid. The head and body are tightly connected.
  • Avoid buying squid that has a soft and mushy body, lacks elasticity, with a head and body that easily separate, opaque pupils, and yellow fluid leaking, as these squids have been preserved for too long and are in the process of decomposition.

  • You can buy pre-ground pork or buy whole pork to chop or grind yourself using a meat grinder.
  • You should choose pork that has a bright pink color, no strange smell, even texture, and translucent white fat; avoid pork that is pale and has a foul smell.
  • You can press the meat with your hand; if you find the meat firm, bounces back immediately, does not leave a dent, is dry, and does not stick to your hand or leak slime, it indicates good quality meat.

How to make Stuffed Squid with an Air Fryer

  • Prepare the ingredients

    To remove the fishy smell from the squid, use white wine to rub the squid, remove the intestines, squid teeth, and backbone. Then soak the squid in diluted white wine for 3 – 5 minutes and then rinse thoroughly with water, let it drain.

    Soak wood ear mushrooms in water for about 30 minutes until soft, cut off the stems, and then slice into small strands.

    Wash the onion, peel it, and chop it finely. Wash the dill and scallions, and chop them finely.

    How to clean squid and remove the fishy smell:

    • Method 1: Combine 1 crushed ginger root, 1 tablespoon of salt, and 1 tablespoon of white wine, rub the squid with this mixture and then rinse with water.
    • Method 2: After cleaning the squid, marinate it with 2 teaspoons of sesame oil and a bit of wine for 5 minutes, then rinse briefly before cooking.

  • Marinate the meat

    Add 200g of minced pork into a bowl, then add the wood ear mushrooms, green onions, onions, and chopped dill. Marinate the meat mixture with 1 teaspoon of seasoning, 1 teaspoon of sugar, 1 teaspoon of fish sauce, and 1 teaspoon of pepper.

  • Stuff the meat

    Use a small spoon that fits the opening of the squid tube, scoop the meat filling into the squid, and press tightly.

    Next, attach the squid head, and use a toothpick to secure the head of the squid to prevent the filling from falling out.

    Tip: To make the filling tighter and easier to stuff, you can use a knife to make a small cut at the tail of the squid to let the air escape!

  • Making squid dipping sauce

    To make the squid sauce, you put 1 teaspoon of satay, 1 teaspoon of oyster sauce, and 1 teaspoon of sugar into a bowl, then stir well.

  • Grilling squid

    First, to stabilize the temperature in the air fryer, preheat the fryer to 160 degrees Celsius for about 10 – 15 minutes.

    Next, line the frying basket with a layer of parchment paper, place the squid on top, and then attach the frying basket to the air fryer.

    Grill the squid for about 15 minutes at 130 degrees Celsius until it is fully cooked.

    Then, take the squid tray out, use a brush to evenly apply the sauce on both sides of the squid, and put it back in the fryer, grilling at 180 degrees Celsius for 8 minutes is all done. You can remove the parchment paper for a crispier squid.

    To present the dish beautifully, place a little lettuce on a plate, cut the squid into small bite-sized pieces, and arrange them on the plate.
