How to choose fresh and safe duck meat
- To choose good live ducks, you should select those that are healthy, with their wings pressed against their bodies, smooth feathers, and lively eyes. Especially, you should choose male ducks as they have thicker meat and are tastier when cooked.
- You should avoid selecting young super meat ducks as they are not tasty, have a lot of fluff, or ducks that have laid too many eggs, with sagging lower bellies; these ducks take a long time to cook because their meat is very tough.
- You should not buy ducks with drooping wings, fluffy feathers, and a distended crop filled with hard food as they may be sick, which can be very harmful to health when consumed.
- If you buy pre-processed ducks, choose those with a yellow outer skin but not too dark or mottled.
- When purchasing, you should press the duck with your hand. If you feel that the duck meat has good elasticity and is firm, then you should buy it. Avoid choosing ducks with many bruises on the skin, soft and mushy meat, and an unusual odor.

How to prepare Honey Roasted Duck using an air fryer

Prepare the ingredients
You need to prepare the duck meat carefully to ensure the honey roasted duck has the best flavor.
First, pluck the duck feathers; dip the duck in cold water to let the meat absorb the water evenly, making the feathers softer and easier to pluck. Then, boil some water, dip the duck in it all over, and take it out to pluck the feathers.
After plucking the feathers clean, use coarse salt to rub all over the duck’s body. Crush some ginger and mix it with rice wine to rub on the duck again, rubbing from the inside out for about 3 – 5 minutes, then rinse with clean water and let it drain.
Additionally, you can mix cooking vinegar and white wine and soak the duck for about 10 minutes, then rinse it again with clean water.
Use a knife to score the duck meat diagonally so that the duck absorbs the seasoning quickly when marinating. For the duck legs, you should score deeply to ensure the meat cooks quickly. Use about 3/4 of the duck for roasting, including 2 legs and 1 breast.
Peel the shallots and garlic, wash them clean, and then mince them finely.

Marinate honey roasted duck
Put the duck meat into a large bowl and add 1/2 of the chopped shallots, garlic, 1 tablespoon of honey, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, 1 tablespoon of oyster sauce, 1 teaspoon of ground pepper, 1/2 tablespoon of soy sauce, 1 tablespoon of sugar.
Mix the spices well and marinate for about 40 – 45 minutes for the duck meat to absorb the flavors. If you have time, you should marinate the duck for 4 – 6 hours or overnight for the meat to absorb even more flavor.
Tip: To prevent the shallots and garlic from burning while roasting, you should crush the shallots and garlic, then squeeze to extract the juice, discard the pulp, and mix in the spices before marinating! -
Roast honey duck using an air fryer
You place the duck meat in the air fryer to roast it twice. The first time, you roast the duck at 120 degrees Celsius for 20 minutes until the meat is cooked.
Tip: To check if the duck is cooked, you can use chopsticks to pierce through the thickest part of the duck. If you see that the meat no longer has red blood, it is done.After the duck is cooked, turn it over and roast for a second time at 160 – 180 degrees Celsius for 5 – 7 minutes to make the duck skin crispy and visually appealing.
Depending on the type of air fryer, the temperature and roasting time for the duck may vary. Therefore, you should observe and adjust the temperature and roasting time accordingly.

Prepare the sauce
You place a pan on the stove, add a little cooking oil, and once the oil is hot, add the remaining shallots and garlic to sauté until fragrant and golden.
