Ingredients for Hong Kong Mango Noodles For 2 people

Mango 1 fruit (about 300gr) Coconut milk 50 ml Gelatin powder 8 gr Sugar 80 gr

How to choose fresh ripe mangoes

  • Good mangoes have a uniform yellow skin, smooth surface, without any roughness or tiny blemishes on the surface.
  • When pressed, they should feel firm, not mushy, and the stem should still be hard, not broken off or separated from the body.
  • A pure, light fragrance indicates naturally ripe mangoes; in contrast, if there is a strong chemical smell, it should definitely be avoided.

How to make Hong Kong mango noodles

  • Cook the coconut milk gelatin mixture

    Put 8g of gelatin powder and 40ml of water into a bowl to dissolve the mixture.

    Next, place a pot on the stove, add 50ml of coconut milk, 50ml of water, and 60g of sugar, and cook over medium heat for about 3 – 5 minutes until the sugar is completely dissolved.

    Finally, pour the melted gelatin bowl into the coconut milk mixture, stir well, and cook for another minute, then turn off the heat!

    Peel and remove the seed from the ripe mango, then cut the mango flesh into cubes.

    Divide the mango into 3 parts, add 2 parts into the blender, and add 40ml of water to blend until smooth.

  • Cook the mango sauce

    Add the pureed mango to a pot, add 20g of sugar, and cook over medium heat for about 3 – 4 minutes until the sugar dissolves and the mango mixture thickens.

  • Completion

    When the coconut milk mixture poured into the mold has set, use a knife to cut it into small strands about 1/3 the width of a finger joint.
