How to choose fresh chicken thighs
- A good chicken thigh has shiny skin, a naturally yellow color, and pinkish-white meat.
- You should choose chicken thighs that have no strange odor, with skin that is not bruised or discolored.
- Gently press to check the elasticity of the chicken; good chicken has firm meat, not soft.

How to make Arabic Kabsa Rice

Prepare the ingredients
First, wash the rice thoroughly and soak it in water for about 30 minutes.
After selecting the chicken thighs, rub them with salt, then rinse with water and let them drain.
Wash 2 tomatoes and cut them into wedges. Peel 1/2 onion, wash it, and slice it.
Peel 1 small carrot and dice it. Peel the ginger and chop it finely.
Finally, wash the lemon and slice it.

Make the sauce mixture
Place a pan on the stove, wait for it to heat up, then add 1/2 tablespoon of olive oil and 25g of unsalted butter.
Once the butter has melted, add the herbs including: 2 star anise, 4 cloves, 2 cinnamon sticks, 4 fennel seeds, 2 dried bay leaves, then add the ginger and onion and sauté on high heat for about 3 minutes.
After 3 minutes, add the tomatoes and 1/2 tablespoon of concentrated tomato sauce, stir-fry for about 5 minutes and then cover to soften the tomatoes.

Cook and roast the chicken
After 5 minutes, open the lid, at this point, the tomatoes have softened, then you start adding an additional 100ml of water and put the chicken in to cook for about 5 minutes. When cooking, remember to flip both sides to avoid burning the chicken.
After 5 minutes, add about 200ml of water, then cover the lid and cook on medium heat for about 15 minutes. After 15 minutes, take the chicken out.
Preheat the oven to roast the chicken, set the temperature to 230°C for 15 minutes to warm up the oven first.
Prepare a tray lined with aluminum foil and place the chicken on the tray to roast at 200°C for 10 minutes. Then increase to 220°C and roast for another 10 minutes.
After the chicken is cooked, take the chicken out of the tray.

Cook the rice
After soaking, drain the rice.
Add the rice and diced carrots into the pan with the chicken sauce.
Add a few slices of lemon on top. Cover and reduce the heat to cook the rice for about 30 minutes on low to medium heat, until the rice is done.

Completion
Place the pan on the stove, add 1 tablespoon of olive oil.
Wait until the oil is hot, then add almonds and raisins to toast until cooked.
Now, serve the rice on a plate, sprinkle with almonds, raisins, and add the grilled chicken on top to finish.
