How to Choose Quality Chrysalis
- Prioritize buying chrysalises with a golden yellow, shiny exterior, uniformly sized, plump, and when touched, they should have a characteristic softness as these are the sweet, fatty, and nutrient-rich chrysalises.
- Additionally, when purchasing chrysalises, you should buy them from reputable insect shops in large markets.
- Avoid choosing chrysalises that are too large or too flat, with dull and hard skins; these types are usually not tasty.
How to prepare Fried larvae with lime leaves
-
Prepare the ingredients
You place a pot on the stove, add about 500ml of water and 1 teaspoon of salt to the pot, then boil over medium heat for about 3 minutes until the water boils vigorously. After that, you add the purchased larvae, blanch for about 2 minutes, then remove them to a basket to drain.
The lime leaves only need to be washed clean and cut into small strips using a knife.

Roasted larvae
First, place a pan on the stove, add 1 tablespoon of cooking oil, and heat over low heat until the pan is hot.
Next, pour the drained larvae into the pan and stir continuously for about 10 minutes until the larvae reduce some moisture, then add 1/4 teaspoon of salt, 1/3 teaspoon of seasoning powder, and 1/4 teaspoon of monosodium glutamate, and stir again.
When you see the larvae become slightly dry, use chopsticks to stir until you hear a faint sizzling sound like dry leaves, which means the larvae are fully cooked. At this point, add 1 tablespoon of cooking oil and 1 tablespoon of fish sauce, and roast for another 3 minutes until the larvae are dry.
Finally, add the sliced kaffir lime leaves, stir together with the larvae until the kaffir lime leaves release their aroma, then turn off the stove.
