- You should choose passion fruits that have a smooth, shiny skin and a deep red color (for red passion fruit) or a shiny yellow color (for yellow passion fruit).

How to make Passion Fruit Ice Cream

Prepare the passion fruit
After purchasing the passion fruit, cut the fruit in half, use a spoon to scoop out the flesh inside, and strain through a sieve to obtain 90ml of pure passion fruit juice.

Mix the gelatin mixture
Add 3g of gelatin into a bowl with 2 teaspoons of water and mix well, then soak for about 15 minutes to allow the gelatin to swell.
After that, add the gelatin into a bowl of passion fruit juice and steam it using water bath for about 10 minutes until the gelatin completely dissolves.
Note: To avoid making the gelatin bitter, do not cook the gelatin for too long. -
Whip the cream
Add 250g of fresh cream and 50g of sugar into a blender to whip the cream for about 5 minutes and set the mixture aside for the next steps.

Mix the passion fruit milk mixture
Put 100g of condensed milk into a bowl and add the entire cooled gelatin passion fruit mixture that has been steamed.
Then, stir well to combine the passion fruit and milk mixture.

Then, place the ice cream in the freezer refrigerator for about 7 – 8 hours before you can enjoy it!
