How to choose fresh ripe mangoes
- Choose ripe, yellow mangoes that feel firm to the touch, with smooth and shiny skin. When gently pressed, you should feel the firmness of the mango flesh; if it’s not soft or bruised, it’s a good ripe mango.
- Avoid buying mangoes that are dark or have an overly attractive appearance.
- In reality, not all ripe mangoes are yellow, and not all mangoes that do not smell are unripe. So, you need to consider carefully to choose the mangoes you like.

How to make Mango pudding

Prepare and puree the mango
First, with 1kg of ripe mangoes (about 2 – 3 fruits), wash them thoroughly and peel the skin. Next, cut 200g of the mango flesh into small pieces and blend it with 100ml of unsweetened fresh milk.
The remaining mango should also be cut into small square pieces.

Soak gelatin and make mango pudding
Pour 100ml of water and 8gr of gelatin powder into a bowl and stir well until dissolved. Let the gelatin soak for 10 minutes to soften.
Bring the blended mango to a pot and heat it for 2 minutes over medium heat. After 2 minutes, when the mango starts to heat up, add the soaked gelatin and cook until the gelatin is completely dissolved, and the mango mixture comes to a gentle boil.
We will pour the cooked mango into flan containers and place them in the refrigerator to set, and we will have mango pudding.

Making coconut milk jelly
We put 3g of jelly powder and 100ml of water into a pot, stir well, then place it on the stove to heat, stirring constantly. Continue cooking the jelly powder on low heat for another 5 minutes until the jelly powder is fully cooked.
Next, we add 50g of condensed milk and 50ml of coconut milk and stir well. Cook until the mixture starts to simmer again, then turn off the stove and pour the mixture into a container, placing it in the refrigerator to let the jelly set.

Preparing tapioca starch and basil seeds
We use 30g of tapioca starch and place it in a bowl, soaking it in 200ml of water for 30 minutes to let the tapioca expand.
Put the washed tapioca and 200ml of water into a pot and bring it to a boil until the tapioca becomes translucent and floats on the surface of the water. We then scoop out the tapioca and rinse it with cold water.
Add 5g of basil seeds into a cup and soak them in 20ml of boiled water that has cooled. You can also add 1 tablespoon of strawberry syrup (or any preferred syrup) to enhance the aroma and give it a nicer color!
