Oranges 3 pieces (sweet oranges) Chicken eggs 2 pieces Condensed milk 200 gr (fat content over 35% or use 150ml whipping cream) Sugar 100 gr Tapioca starch 10 gr Vanilla powder 1 tube
How to choose sweet oranges
- You should choose yellow oranges for making ice cream, as this type of orange is sweet and juicy, and it will also make your ice cream more colorful.
- You should select oranges with a plump, juicy skin, that feel slightly soft when squeezed and have essential oils. These are the freshest oranges.
- Choose oranges that feel heavy in hand, with a balanced shape, not deformed.
- Do not choose oranges that feel soft and mushy when squeezed, or have large dark spots on the skin surface. These may be oranges that have been picked for a long time and are likely to spoil or rot.

How to make canned orange ice cream
-
Prepare the ingredients
Wash the oranges, cut them in half to extract the juice, filter out the seeds and orange segments (about 250ml of orange juice).
Tip: You can use sweet oranges or any type of orange you like, but be sure to check the sweetness and acidity of the oranges to adjust the sugar accordingly.
Crack the eggs in half, then carefully separate the yolks, discarding the egg whites.
-
Cook the egg mixture
Put 2 egg yolks, 100g of white sugar, 10g of cornstarch, and 1 vial of vanilla powder into a pot, then use a whisk to beat until the eggs turn a bright yellow color.
Next, pour all the orange juice into the egg mixture and stir well.
Finally, place the pot on the stove over low heat, stirring continuously until the mixture thickens.
-
Make orange ice cream
Let the mixture cool and then add 200ml of condensed milk (or 150ml of whipped cream that has been whipped soft) to the mixture, using a whisk to stir until the mixture is uniform.
Tip: If you use whipped cream, let the whipped cream and whisk sit in the refrigerator for 30 minutes before whipping. You don’t need to whip it stiff; whipping it soft is enough.

Successful Execution Tips
- Use egg yolks to make ice cream because egg yolks are a natural emulsifier that is only found in premium ice cream or homemade ice cream. Using egg yolks will be safer and more reliable than using industrial emulsifiers. Egg yolks help the ice cream to be smooth, fluffy, and airy.
- It is advisable to use vanilla to prevent the final product from having a fishy egg smell if you are using industrial chicken eggs.
