Ingredients for Pecan Candy For 2 people

Pecan nuts 125 gr Brown sugar 200 gr Allspice 5 gr Cinnamon powder 3 gr Salt 3 gr Water 45 ml

Information about the ingredients

Pecan is a type of nut, originating from Mexico and North America. The pecan tree belongs to the hickory family, with the outer shell of the pecan being brownish-yellow or beige, and the nut is oval-shaped, occupying about 40 – 60% of the inside of the fruit. When eaten, you will taste the slightly sweet, rich, and naturally fatty flavor of the pecan nut.

Allspice is a type of plant that grows in Central America, Mexico, and the West Indies. This spice is commonly used in cooking due to its distinctive aroma and flavor.

You can buy pecans and allspice at major supermarkets or specialty stores that sell imported goods.

How to make Walnut Candy

  • Make the syrup

    First, add 200g of brown sugar to the pot, then add 3g of cinnamon powder, 3g of salt, and 5g of allspice to enhance the aroma.

    Next, add 45ml of water to the pot. Heat the mixture over medium heat, stirring continuously to dissolve the sugar quickly.

    Tip:
    • You can also use white granulated sugar instead of brown sugar.
    • Besides cinnamon and allspice, you can add nutmeg or cardamom if you prefer.

  • Mix the walnuts

    When the syrup mixture is boiling, add the walnuts to the pot, stirring continuously so that the walnuts are evenly coated with syrup for a better candy color.

    Cover the pot for about 2 minutes and continue boiling until the syrup thickens.

    Pour the walnuts onto parchment paper, separating them so they don’t stick together. You need to work quickly to prevent the walnuts from sticking together in the pot. Wait until the walnuts are completely dry before storing them in a container.

    Tip:

    • If using white sugar, the cooking time may be longer by 3 – 5 minutes because you need to cook until the sugar turns light brown before turning off the heat.
    • When taking the candy off the parchment paper, you can separate them into individual pieces or in clusters of 2 – 3 pieces.

Tips for Successful Execution

  • You can bake the nuts for 3 – 4 minutes at 175 degrees Celsius before making the candy to enhance its aroma.
  • The syrup must be boiling before adding the macadamia nuts to prevent the candy from sticking.
  • You need to let the candy cool completely before putting it in a box or wrapping it for storage; otherwise, the candy will become moist and won’t keep for long.

How to Store Macadamia Candy

  • Store the candy in a sealed bag or container.
  • It can be used within 1 week at room temperature or 1 month in the refrigerator.
