Ingredients for Winter Melon Tea For 4 cups

Winter melon 1 fruit Longan fruit 1 fruit Red apple 100 gr (jujube) Dried longan 50 gr (longan dried) Pandan leaves 50 gr (pandanus leaves) Grilled sugarcane a little (1 piece) Rock sugar 150 gr Salt 1/3 tablespoon Filtered water 3.5 liters

How to choose fresh and delicious winter melon

  • Fresh and delicious winter melons are large, look plump, and have a green skin. In contrast, older melons will have a black color, many seeds inside, and will taste sour, so you should avoid buying them.
  • A thick and plump stem is also a sign of a good young winter melon. These melons will have a characteristic sweet taste when eaten. Especially, fresh winter melons will have a green, fresh stem.
  • To buy a good melon, you should choose those that feel heavy and firm when held. The skin should be hard but can be pressed with a fingernail. Avoid buying those that feel soft as they have wilted.

How to make grilled sugarcane

  • When you buy sugarcane, wash it briefly with water, then leave the skin on and roast it directly over a fire until the skin is charred.
  • After roasting, let the sugarcane cool down, use a knife to peel off the skin, and you will have the grilled sugarcane ingredient ready to make winter melon tea!

How to Make Melon Tea

  • Prepare the Ingredients

    After purchasing the melon, use a knife to peel off the skin and wash it thoroughly. Then, remove the seeds and cut the melon into small pieces.

    Smash the monk fruit into small pieces, wash the pandan leaves with water, then tie them together, and for the roasted sugarcane, split it into 4 lengthwise and cut it into short pieces about 5cm long.

  • Cook the Melon Tea

    First, place all the prepared ingredients into a pot in the following order: 150g rock sugar, roasted sugarcane, melon, 100g red apple, 50g longan, 1/3 tablespoon of salt, smashed monk fruit, and 50g pandan leaves.

    Next, pour 3.5 liters of water into the pot and place it on the gas stove to boil over high heat. Once the water is boiling, reduce the heat to low and continue to cook for 1 hour until the melon is soft and releases all its juice.

    Finally, turn off the heat and proceed to filter out the liquid. Just let the tea cool, and you can enjoy it right away.
