Pork ribs 300 gr Pumpkin 1/2 fruit (about 300gr) Green onions 2 stalks Shallots 2 bulbs (chopped) Cooking oil 1/2 tablespoon Common seasoning a little (salt/ seasoning powder/ monosodium glutamate/ ground pepper)

How to choose fresh ingredients

How to choose quality pork ribs

  • You should choose ribs that have a natural light red color; when you press lightly on the rib, it should have a certain level of elasticity.
  • To make a delicious soup, you should select ribs that have a mix of fat and lean meat. Additionally, prioritize buying ribs with flat, small bones as these will have more meat.
  • Avoid buying ribs that show unusual dark spots, have an unpleasant odor, or are discolored and no longer fresh, as these are ribs that have been stored for too long.

How to choose fresh pumpkin

  • If you plan to make soup, choose round pumpkins with sturdy green stems that are about 2 finger lengths long. When you pick it up, it should feel firm, not soft, and should not have cracks or scars.
  • Avoid buying pumpkins that have cracks on the skin or are slimy; they will not taste good when eaten.

  • Prepare and marinate the pork ribs

To eliminate the smell of the pork ribs, after buying them, rinse them and then soak the ribs in diluted saltwater for 15 minutes. After that, take the ribs out, rinse with clean water, and let them drain.

Tips for cleaning pork ribs without odor:

    • Method 1: Put the ribs in a pot filled with clean water so that the water just covers the ribs, boil for about 2 – 3 minutes, then take the meat out and rinse again with water.
    • Method 2: Use coarse salt dissolved in water, soak the ribs for 25 – 30 minutes. After the time is up, take the ribs out and rinse them clean.
    • Method 3: Soak the ribs in saltwater, adding a few smashed ginger slices or a few drops of white wine.

  • Prepare vegetables

Peel the pumpkin, wash it clean, and cut it into pieces about 1 finger thick.

Green onions remove the roots, wash them thoroughly, and chop them finely.

Tip: To keep the pumpkin sweet and rich, do not cut it too thin, but rather cut it a bit thicker.

Put a pot on the stove over medium heat, add 1/2 spoon of cooking oil to the pot. Wait for the oil to heat up, then add the marinated ribs, stir-fry for about 2 minutes until the ribs are browned.

Next, add 1 liter of water to the pot and bring to a boil. When the water boils, skim off the foam, reduce the heat, add 1 tablespoon of seasoning, cover, and simmer for about 20 minutes until the pork ribs are cooked and the soup is sweeter.

After 20 minutes, add all the pumpkin, turn the heat up to medium, and cook for another 10 minutes until the pumpkin is soft, then season to taste, add the chopped green onions, turn off the heat, and ladle the soup into a bowl.

Sprinkle a bit of ground pepper on the soup to enhance the flavor, and then get ready to enjoy.
