  • Prepare Pork Intestines

    First, take the pork intestines you bought and rub a little salt all over them for about 3 – 5 minutes. Then, rinse several times with water until clean, and drain.

    At the same time, place a pot on the stove with 500ml of water and bring it to a boil over high heat. Once the water is boiling, add 1kg of drained pork intestines, blanch for about 3 – 5 minutes, then remove and let cool.

    • Step 1: First, turn the intestines inside out and rinse 1 – 2 times with water until clean.
    • Step 2: To clean the intestines of slime and eliminate odor, rub some salt for 3 – 5 minutes.
    • Step 3: Squeeze the juice of 1 lemon into the intestines, continue to rub for about 10 minutes, then rinse several times with clean water.
    • Step 4: Blanch the pork intestines for about 3 – 5 minutes, then use a knife to scrape off any remaining residues on the surface, and rinse again.

    Next, you place a pan on the stove with 3 tablespoons of cooking oil over medium heat. When the oil is hot, add the remaining chopped shallots and garlic to sauté until fragrant.

    Then, add all the marinated pig intestines and stir continuously with chopsticks for about 3 – 5 minutes.

    When the intestines are slightly firm, add 500ml of coconut water, simultaneously reduce to low heat, and braise for about 35 – 40 minutes.

    When the coconut water has thickened and the pig intestines are cooked, season to taste, turn off the heat, and transfer to a plate to cool for 5 minutes, then use scissors to cut into bite-sized pieces.
