Prepare the ingredients
To remove the odor from the pork, you can soak it in diluted salt water for about 10 minutes, then rinse with clean water and let it drain. After that, use a knife to cut along the grain of the meat into small pieces.
Next, place a pan on the stove and pour in 1/2 cup of water, bring to a boil, then add the meat to cook. Wait until the meat is cooked, then remove it and let it drain.
Note:- You can choose pork loin, shoulder, or lean ham. Each type yields different colored floss, but pork loin produces the whitest and most beautiful floss.
- When selecting the meat, you should carefully remove the tendons to ensure that the finished floss does not contain tough tendons and is fluffy. To save time, you can ask the butcher to do this for you.

Making Pork Floss
After boiling the meat until cooked and letting it cool, you divide it into small portions and use a blender to grind each portion finely. When blending, you need to add small amounts of meat into the blender. To avoid the meat being crushed, you should press and release the blend button continuously.
Once you have blended the first batch, add 1 spoon of fish sauce and 2 teaspoons of seasoning powder to the ground meat, then mix well and marinate for about 3 – 5 minutes.
Next, place this meat into a dry pan and cook on the stove until it turns slightly golden.
You continue to blend the second portion of meat and then cook it until golden. Keep doing this until all the prepared meat is finished.

Note: This recipe for fish sauce and seasoning powder results in slightly bland floss to pair well with various dishes; if you prefer it a bit saltier, you can add a little more fish sauce. -

Prepare the Meat
After purchasing the meat, remove the odor immediately by soaking it for 10 – 15 minutes in water mixed with 1 spoon of salt and 9 spoons of alcohol, then rinse with clean water.
Let the meat drain, then cut it into pieces about 3 finger lengths long and about 1/2 finger thickness.
How to Clean Pork Properly without Odor- To prepare pork without odor, you can rub the meat with a smashed piece of ginger and 30ml of white alcohol (if available).
- You can use lemon and rice washing water by soaking the pork in a mixture of lemon juice and rice washing water for 15 minutes before preparing to eliminate the odor.
- Additionally, you can use flour to rub the meat for about 7 – 10 minutes and then wash it clean so that the meat is not only odorless but also free of slime.

Boil and Fluff the Meat
Place a pot on the stove, pour in water to fill 1/2 of the pot, and add 1 teaspoon of seasoning powder and a smashed piece of ginger. Place the cleaned meat in the cold water to make it softer after boiling. Turn on medium heat and boil the meat for 20 minutes.
Check the meat by using chopsticks to poke it, and if no blood flows out, the meat is cooked, then remove it to drain.
Next, place the meat in a plastic bag, use a meat pounder to crush the meat, then put it into a grinder. Turn on the stuffing mode to grind the meat, grinding for about 5 minutes until the meat is fluffy, then take it out to prepare for marinating.
