How to make Saigon stick bread

  • Mixing the dough

    First, take a bowl and add 100ml of water, 2 teaspoons of sugar, 1/2 teaspoon of salt, and 5g of dry yeast, then use a whisk to mix well and let it sit for about 7 – 10 minutes for the yeast to activate.

    Next, add 30g of melted unsalted butter and 200g of bread flour, then mix until the mixture forms a uniform dough.

  • Knead the dough and let it rise

    Next, prepare a cutting board, sprinkle a little flour on the surface, then place the dough on top, using your hands to knead and shape it gently until the dough becomes smooth and elastic.

    Tip: Sprinkling a little flour on the cutting board will help prevent the dough from sticking to the board while kneading!

    After that, divide the dough into equal portions and roughly shape them into balls with your hands. Finally, cover the surface of the dough tightly with plastic wrap and let it rest, allowing it to rise for about 45 minutes.

  • Shaping the bread and second proofing

    After proofing, the dough will double in size, continue to place each dough ball on the cutting board, use a rolling pin to flatten it evenly, then use your hands to roll it into a stick about 25cm long. Keep doing this until all the dough is used up.

    Then, use plastic wrap to tightly cover the surface of the bread and proceed to proof for the second time for about 15 minutes.

  • Baking the bread and finishing

    First, preheat the oven to 230 degrees Celsius for 10 minutes. At the same time, take a baking tray and place the bread on it, using a brush to spread the remaining 10g of melted unsalted butter over the entire surface of the bread, place it in the oven and bake for 10 minutes at 180 degrees Celsius, until the bread is cooked, then turn off the oven and take the bread out.

    Finally, use a knife to cut a slit along the length of the bread, spread on some pâté and add pork floss, then enjoy right away!
