How to prepare Grilled Goat with Salt and Chili Paste

Prepare the goat
After buying the goat, use a knife to scrape off the hair, then use a brush to clean the hooves. You can also singe the goat over an open flame to remove hair and dirt.
Next, to eliminate the goat’s fishy smell, place the goat in a bowl and marinate it with white wine and shredded ginger for 2 – 3 minutes, then rinse it several times with water.
Use a knife to chop the goat in half.
How to remove the smell of goat
- To remove the smell of goat, you should soak the goat in tea water and then stir-fry until the water evaporates, then add strong tea. After 2 – 3 times of doing this, the goat’s smell will disappear and the meat will be more tender and delicious.
- Additionally, you can briefly blanch the goat in a pot of water that contains a bag of ingredients including cardamom, cloves, persimmon, and crushed and chopped rice paddy herb, then tie it tightly in a piece of cloth.
- You can also remove the goat’s smell by rubbing the meat with a bit of white wine mixed with finely chopped ginger. Then rinse with cold water. Alternatively, you can use beer to eliminate the smell.
Wash the lemongrass, then use a knife to crush it and cut it into pieces. Peel and slice the ginger.

Prepare the marinade
Add 2 tablespoons of salt, 3 bird’s eye chilies, 4 shallots, and 4 cloves of garlic into a bowl, then use a pestle to grind them finely.
Next, add 1 jar of shrimp paste (85g jar), 1/2 tablespoon of monosodium glutamate, 3 tablespoons of cooking oil, 1 tablespoon of soy sauce, and 2 tablespoons of fresh coconut water into the bowl, then use a spoon to mix well until all the ingredients are fully dissolved.

Boil the goat
Place a pot on the stove, add 600 – 700ml of coconut water, 2 crushed lemongrass stalks, sliced ginger, and 1/2 tablespoon of salt.
Then, add the goat into the pot, cover it, turn the heat to medium, and boil until the water in the pot comes to a boil and the goat is just cooked through. After that, remove the goat and let it drain.

Grilled Goat Rack
Prepare a hot charcoal grill. Next, dip the goat rack in the sauce bowl and then place it evenly on the grill.
Tip: If you have time, you can marinate the goat rack with the sauce for 30 – 45 minutes to absorb the seasoning before grilling.
Proceed to grill the goat rack evenly on all sides for about 5 minutes. Then use a brush to spread an additional layer of sauce on all sides of the goat meat and grill until the goat rack is golden brown, grilling time is about 15 – 20 minutes.
